So many smoothies. I also really like doing creamy cashew pasta sauces in it. Soaked cashews, tomatoes or cooked or canned squash or pumpkin, spices/seasoning to taste, water or broth to thin to the right consistency. The vitamix will heat it up enough to pour over warm pasta - super easy, super quick veg + protein + carb meal.

We make pancake, soups, and smoothies

Oh and lots of pesto in the summer time. The one thing to consider making anything branded with olive oil is you have to watch your speed. That thing is so powerful it can make the extra virgin olive oil taste bitter. It's suceptible to mechanical agitation. Also watch when making hummus (which the vitamix is also great for)

Our fav smoothie is bananas, a date for sweetness, touch of peanut or almond butter, a little ice and milk and a pinch of nutmeg.

@Boogs: nope. I was just lazy to chop the onion one day and I tried it out. It worked surprisingly really well.

Oh the other one my kids go NuTs over is frozen banana ice cream. When we get brown bananas I peel them and keep in the freezer. For dessert I add frozen bananas and some milk. It makes it like ice cream! Sometimes we add a drizzle of chocolate syrup. They go nuts over it.

Gazpacho, especially in summer when we can get locally grown tomatoes, and all kinds of smoothies. You can also make nut butters from scratch, which are delicious.

I've had mine for almost a decade and still use it all the time.
