⅓ cup honey&#60;br /&#62;
2 Tablespoons Dijon mustard&#60;br /&#62;
2 pounds (8 half breasts) boneless skinless chicken breasts (I'm using chicken thighs)&#60;/p&#62;
&#60;p&#62;For butternut “risotto” (I may or may not make an actual risotto...depends on how my day goes).&#60;br /&#62;
1½ Tablespoon olive oil&#60;br /&#62;
½ red onion, minced (½ cup)&#60;br /&#62;
2 cups roasted butternut squash&#60;br /&#62;
¼ teaspoon kosher salt&#60;br /&#62;
¼ teaspoon black pepper&#60;br /&#62;
½ cup low-sodium chicken broth&#60;br /&#62;
2 Tablespoon balsamic vinegar&#60;br /&#62;
2 cups cooked brown rice&#60;/p&#62;
&#60;p&#62;For snap peas&#60;br /&#62;
1 Tablespoon olive oil&#60;br /&#62;
¾ pound snap peas (3 cups)&#60;br /&#62;
dash of kosher salt and black pepper&#60;/p&#62;
&#60;p&#62;For honey dijon chicken&#60;br /&#62;
1. Heat oven to 400°F.&#60;br /&#62;
2. Combine oil, garlic, salt, pepper, honey, and Dijon. Place chicken breasts in a foil lined 9 x 13 dish, brush both sides with honey mixture.&#60;br /&#62;
3. Bake for about 20 minutes or until internal temperature reaches 165°F.&#60;/p&#62;
&#60;p&#62;Meanwhile&#60;br /&#62;
For butternut “risotto”&#60;br /&#62;
1. Heat a large skillet over medium heat and add oil and onions, sauté for 2-3 minutes.&#60;br /&#62;
2. Add in squash, salt, pepper, broth, and vinegar; mash all&#60;br /&#62;
together.&#60;br /&#62;
3. Stir in rice and heat until warmed thorough.&#60;/p&#62;
&#60;p&#62;For snap peas&#60;br /&#62;
1. Heat a medium skillet over medium-high heat and add olive oil.&#60;br /&#62;
2. Add peas, salt, and pepper. Cook 2-3 minutes, stirring frequently. &#60;/p&#62;
&#60;p&#62;Wed: &#60;/p&#62;
&#60;p&#62;INGREDIENTS&#60;br /&#62;
For bacon butternut pasta&#60;br /&#62;
6 ounces bacon, diced&#60;br /&#62;
1 red onion, diced (1 cup)&#60;br /&#62;
2 cloves garlic, minced&#60;br /&#62;
1 bunch kale, chopped (6 cups)&#60;br /&#62;
¼ cup low-sodium chicken broth&#60;br /&#62;
3 cups diced roasted butternut squash&#60;br /&#62;
1 Tablespoon chopped sage&#60;br /&#62;
2 ounces goat cheese (½ cup)&#60;br /&#62;
4 cups cooked whole wheat pasta&#60;/p&#62;
&#60;p&#62;1. Heat a very large skillet over medium heat; add bacon and cook until crispy. Remove to a paper towel covered plate, press to remove grease then return bacon to pan.&#60;br /&#62;
2. Add in onion, garlic, kale, and broth and cook about 5 minutes.&#60;br /&#62;
3. Add in squash, sage, goat cheese, and pasta; cook until warmed through.&#60;/p&#62;

&#60;p&#62;This is the first time I'm going to be away at dinner 4 out of 5 nights during the week because of my schedule, so I tried to make it super easy for SO to manage while wrangling 2 kids by himself all night. 😕

<description>&#60;p&#62;Still working on mine. And we are trying a switch from grocery shopping on the weekend to Wednesday (to save a trip into town). So I got a few things today, but will go again wednesday.&#60;/p&#62;
&#60;p&#62;Sunday: Baked chicken drumsticks/thighs, sweet potato/kale/wild rice side dish&#60;br /&#62;
Monday: Parmesan Tilapia, quinoa, broccoli&#60;br /&#62;
Tuesday: Salsa Verde Chicken and bean tacos&#60;br /&#62;
Wednesday: Homemade pizza w/ veggies&#60;br /&#62;
Thursday: pasta with pesto, sausage, spinach&#60;br /&#62;
Friday: maybe slow cooker chili?&#60;br /&#62;
Saturday: burgers, potato wedges, salad&#60;br /&#62;
Sunday: a roast of some kind?&#60;br /&#62;
Monday: Lentil/root veg soup&#60;br /&#62;
Tuesday: some kind of taco...
