Egg sandwich!

Plop an egg into a small microwave safe bowl, beat it with a fork, then microwave for 45 seconds to a minute. Toast an English muffin. Plop the cooked egg on the English muffin and add cheese, tomatoes, spinach, deli meat, or whatever else you want.

I've seen lots of freezer breakfast burrito recipes on Pinterest. You can fill them with just about anything! DH works strange hours so he loves them for a quick meal.

I used to make these applesauce oatmeal muffins for breakfast - I'd just freeze and then microwave for 30 seconds:

@mrsmenow: that is def a good scrambled egg alternative! Eggs are high in cholesterol and my husband's family has a history of high cholesterol so I'm very wary of giving her too much eggs!

I'm on a mission to eat more than just eggs, oatmeal and cereal for breakfast. What are some good make ahead/freezer and quick breakfast in your repertoire that is not prepackaged?

Recently I made banana/pumpkin oatmeal cups and froze extra. Plan to make whole wheat (or buckwheat if I can find it tonight) pancakes tomorrow and making more to freeze.
