It sounds like your LO eats a really good variety, at least compared to my kids! They eat basically the same lunch every day: PB&J, fruit, cheese, and a "crunchy snack" (goldfish, pretzels, etc). Dinner varies. I try to make one or two meals a week that everyone mostly eats: tacos/quesadillas (they won't eat a taco but if I make it into a quesadilla form they will), pasta, meatloaf. If I make food that they won't eat for dinner then I have easy kid food on hand: mac & cheese, chicken nuggets, pizza. My oldest LO is almost 4.5 and has really started to expand what he's willing to eat for dinner and it's been great. For awhile there he ate mac & cheese 90% of the time. Oh and the only vegetables they eat are peas. I've given up fighting that one, but I do try to sneak veggies into pasta sauce.

@cake2017: I think that your little one is eating a lot of different foods. We do creamy tacos, tuna fish salad (no celery), chicken salad (no celery), Campbell’s chicken noodle soup, chicken egg rolls, pumpkin egg muffins (with chocolate chips) too.

@cake2017: my five year old won’t eat tacos but he will eat some of the components separately like shredded cheese and tortilla. My kids don’t eat everything listed but I’m trying to expose them to new things. Definitely a process!

@petitenoisette: I’m reading it and thinking the same thing! You got it all under control! 😬@pachamama: @Anagram: I want to try the soup hack. Thx!

@graceandjoy: sounds like a great variety. You’re also lucky DH cooks!@jhd: Sounds good. LO isn’t into the mixing of different ingredients yet. I tried mini tacos and he cried 😯 I tried Chili and he won’t touch it. We do a lot of breakfast especially eggs and waffles!@hilary: I tried the wraps because my mom did a lot of them growing up and he won’t touch it. He won’t try deli meat. @Dynamite: He will eat turkey sausage links. Maybe i’ll try adding it to a few dishes. Thanks for the tips!

It’s so hard not to get in a rut! I’ve realized this fall that I also only have like 1 weeknight where I feel I can actually cook something more involved, usually Monday since I’m not as tired. Then the rest of the week we generally do taco Tuesday (but different types of tacos, usually black bean W/crunchy shells, but also soyrizo potato w/ soft corn tortillas, or roasted sweet potato w/refried black beans in flour tortillas), then one night we’ll do pasta (usually tortellini, I buy a big bag of it frozen at Costco and their pesto is the best + roast veggies or salad), And Friday’s we usually make or order pizza. To fill in the other nights, I do a lot of soups now that it’s colder with a baguette. Another new thing I’m trying to do is rice bowls, there are so many different combos and then you can make extra rice to go w taco night or I also like to make fried rice with tofu.

This post is making me sound like I have my act together way more than I do! I usually plan out 5-6 meals a week and then end up only making 2-3 and the others get pushed to the next week.

I think the foods you listed represent a good nutritional balance. I would keep offering those but pair them with stuff he may not eat but will at least provide some exposure.

The only things my oldest will eat consistently are bread, plain pasta, cheese and hummus. 50/50 things include rice and beans. So we pretty much cycle between greek, mexican, pasta, and sandwiches. I mix up the specifics to try for variety, but he never really eats outside his comfort zone. For example, tonight we're having burgers, baked beans and broccoli. He'll probably eat a burgerless cheeseburger (aka cheese on a bun) and might try the baked beans.

I've recently started planning meals around themes because I felt like we were in a rut.

Soup or chili
Asian
Mexican
Pasta
Breakfast
Salad + sandwich or baked potato
One pan or crockpot meal

Our current faves are
Skinnytaste Turkey Sweet Potato Chili
Korean Beef Bowls (have used Damn Delicious and Skinnytaste recipes for this in the past)
Chicken and broccoli from iheartumami.com

Breakfast is always easy and my kids love it. Pancakes, muffins, waffles (we've recently moved to whole grain protein mixes) + eggs + fruit + bacon/turkey bacon/chicken sausage

My kids eat pbj almost every day for lunch (even though we are home!) Occasionally I'll mix it up with hummus & veggie wraps, quesadillas, wrap pizzas, and pancakes for lunch. They also think pancake sandwiches are cool so I make extras for that (use pb or cream cheese). I don't think the same things for lunch most days hurts anyone.

Tonight we are having BBQ chicken with pineapple and rice and broccoli. Literally put the chicken in a pan, cover with BBQ sauce and pineapple, then bake. It's so easy and turns out well every time for me.

I've been making one soup a week and freezing any extra we have after a few days. The kids aren't too excited about it but as long as there are crackers/bread/chips to go with it they will eat it. I reheat the leftovers for a warm easy lunch for me.

Lunch wise, my 5 & 3 year old don't mind eating the same stuff so we pack chicken nuggets, sweet potato fries, cucumbers, cheese, grape tomato, fruit, egg white, pizza bites... Sandwich fillings include cream cheese, cheese, ham & cheese, pb&j. We've also done sphagetti o's (from Trader Joes)

Dinner wise, we pretty much have these on rotation-
Breakfast for dinner (egg, bacon, sausage, pancakes, etc)
Pizza night (and pasta/salad usually)
Chinese night (we are Chinese so DH will usually cook rice + veggie/meat dish)
Soup night (rotate between udon, ramen, pho, various other Korean/Chinese soupy noodle recipes)

Sometimes we just do a charcuterie night too, just throw random stuff on the cutting board haha, but the kids love it.

We also like to do what we call like a Boston Market night (if you don't have a Boston Market in your area, they sell rotisserie chicken/meats with like Thanksgiving sides). So DH will do a protein like wings, ribs, etc and then a couple sides like corn, broccoli, mac & cheese, etc.

Lately I've been making a lot of soups.

My new obsession is a TJs soup hack: 2 containers kettle cooked chicken soup, half a cup of heavy cream, 1 container cheese tortellini, a handful of spinach and basil. It's so good and the kids gobble it up. I also send it for their lunches in thermos containers.

I also make taco soup a lot (a non-spicey version for the kids). We do pasta 1 night of the week. And usually some type of asian food one night of the week--something easy like chicken fried rice with dumplings, or sometimes a mild chicken curry over rice. We also have plenty of nights with easy food, like fish sticks and a bag of steamed broccoli, haha

I love brats because sausage is so versatile. I'll eat it in eggs with spinach. Pasta with Alfredo and broccoli/cauliflower/carrots. Sausage and kraut or cabbage with potatoes. Jambalaya ( sausage, rice, onions, green peppers - kids don't like spicy)

I do "rollups" for the kids' lunches at least once a week. Tortilla with cream cheese spread on it, sprinkle some shredded cheddar then add a couple pieces of lunch meat and roll it up. No clue how we got started on these, but my kids love them. Then they basically get PB sandwiches all other days. Always a little side of fruit and maybe a yogurt or something snacky.

I feel like I am running out of food ideas. It’s just LO1(2.5yo) and I that eat during. the week. DH buys and is at work. LO2 is breastfed.

Soooo, this is what we eat- turkey meatballs, waffles, eggs, pasta, rice, broccoli, spinach, chicken, salmon, tofu, fruits, quinoa, chicken nuggets, cereal, carrots, peppers (all colors), black bean dip, salsa.

He is selective but eats all the above. I will eat other things and offer but he declines.

What else can I make? Eat? He has a veggie every night(the above), protein, carb...

Is this okay and I just continue to mix it up as I do....? I send the meals to school with him too for lunch. He’s not taking a PBJ just a PB once in awhile lol.

Please share your opinion and any ideas that you serve!
