My parents are being good and staying home (as are we) so I struggled with whether or not to make her cookies for my family in the area.  In the end I decided not to.  &#60;/p&#62;

&#60;p&#62;I also signed up for this thing I saw on Facebook.  The Kennett Kitchen Kids' Winter Baking Challenge.  Holy moly, it's a lot work.  Much more than I anticipated.  My daughter is loving it though.  She's convinced she's on Nailed It (in a good way).  We finished the first challenge and have two more to go.  The first challenge was a Three Little Pigs gingerbread house scene.

<description>&#60;p&#62;And sorry for the serial posts but my son has indicated that he considers a cake to be required for Christmas Eve dinner.  So on Christmas Eve I am going to attempt my first layer cake.  I think I will look for a chocolate cake batter and a vanilla buttercream so I can use more of the “peppermint snow”.  (If not for the mint flavor add, I would probably try to make the cake version of these cupcakes I made a few years ago with whole wheat flour and brown sugar cream cheese frosting.)&#60;/p&#62;

<description>&#60;p&#62;@lady baltimore:  I made chocolate rollout cookies two weeks ago, and they were a big hit with my family.  This recipe plus 1 tsp vanilla and an extra egg yolk:&#60;/p&#62;

&#60;p&#62;Make sure to leave the dough in the fridge for 2 hours before rolling out.  Also, use 50-50 flour and cocoa powder to roll them out.  Flour will make them look dusty.&#60;/p&#62;
&#60;p&#62;I copped out and got Betty Crocker icing.  My kids loved decorating them.  We had colored sugar plus I splurged in peppermint “snow” from William Sonoma.

I honestly viewed this as a huge chore but I am completely converted and plan on making more of them tomorrow because we ate ALL of them within one day!!! &#60;p&#62;I always do a major cookie baking to give as gifts so I just finished that up: chocolate chip, oatmeal chocolate chip, peanut butter cup, chocolate truffle, snickerdoodle, gingerbread, sugar cookies, and Italian wedding cookies. It’s a massive operation but I love it.&#60;/p&#62;
&#60;p&#62;For us I still have planned: gingerbread for houses, sausage balls and chouquettes for a Christmas Eve app night, and cinnamon buns for Christmas morning. Eek, hope my family eats a lot of this or I will have a lot of work to do for New Year resolutions!

<description>&#60;p&#62;So far I've made ginger molasses cookies (Barefoot Contessa recipe without the crystalized ginger), honey lavender biscotti, Amaretti (chewy almond cookies) with honey, oatmeal chocolate chip, and Italian rainbow cookies (Smitten Kitchen has a recipe that is similar to the one I use). I'm taking a baking break now since I went a little overboard. The only other thing I'm definitely planning is homemade cinnamon rolls for Christmas morning. The biscotti, amaretti, and oatmeal chocolate chip recipes aren't online, but I'm happy to type them out if anyone wants them.
