It's just going to be me and my two kids for Easter (and in general) so I'm trying to think of things that are fun but there's no way I'm making a formal dinner right now. I'm thinking regular DIY breakfast stuff, deviled eggs and a veggie and cracker tray for lunch, and biscuits and gravy as breakfast for dinner. They're all foods that my kids like, all ones that feel sort of festive to me, and all ones that they will want to help cook so we can be hanging out together in the kitchen.

@wrkbrk: unless everyone inserts a digital bunny using a filter this year 😆
when my kids were smaller our egg stuffers were stickers, temporary tattoos, tiny things of bubbles, dried fruit, goldfish, and I'd usually buy a box of sweetened cereal that was in a shape. Like Reese's Puffs makes a bunny one this time of year. Now that they're big it's just straight up jelly beans and chocolate over here.

@lindseykaye: Tell me what you use for egg stuffers!
Such a first world problem but I was looking forward to our Easter tradition of an egg hunt in our local park!! We moved when DS was one and he has participated every year since. I guess everybody will have a “gap” for 2020 in the Easter bunny pictures 🤷🏼‍♀️

We’re doing take out. I’ve been gathering the Easter menus from various local restaurants and will place an order soon. It’ll be a nice treat and break from cooking.

We’re an interfaith family, so whatever I make needs to also be kosher for Passover. I will probably do either steak and fries, or chicken “breaded” with matzoh meal. Dessert will probably be a sundae bar. Or Easter candy... :silly:

Last year we did cheese fondue with tons of dippers for Easter and it was really fun. Maybe this year we'll do the same idea but trim down the number of dippers since it will just be us. And then some kid friendly dessert to go with.

@lindseykaye: Missing our egg hunt with friends this year too. We've taken a photo with all the kids together every year so bummed to miss it.

I've been debating a Honeybaked Ham. Might just make do with one from the grocery store with au gratin potatoes, broccoli and rolls. I usually keep Easter breakfast simple with eggs and cinnamon rolls.

Well I found ham in our freezer recently from last Easter that we never ate the leftovers for so... no ham on the menu :p

It'll just be us 4 (we typically alternate years of staying home and seeing family so this isn't unusual for us to be solo) and I'm definitely planning the menu around what we've got on-hand and can get in our next grocery shop like most people here.

So, Easter dinner will be
grilled steak
roasted asparagus with almonds
scalloped potatoes
a little spring salad
and rolls (frozen)

What I'll really be missing is our annual egg hunt that we host for all our friends and their kids. It's usually a packed house, hundreds of eggs, and a ton of fun. I make a big brunch spread and we spend like every night the week before stuffing eggs at night. The kids go crazy and it's usually gorgeous weather and time spent outside with our village - next year we'll make it better than ever <3

We are doing our usual peach reisling glazed ham, spinach salad with hot bacon dressing, cheese puffs. The only difference is Easter is our wedding anniversary so instead of a spring type dessert it will be red velvet since that was our wedding cake

What about scalloped potatoes? That’s what we always have with ham.

Our family tradition for the past few years has been takeout from a really great barbecue place. Luckily this year they’re doing delivery, so we ordered a big sampler platter - it’s going to be too much food, but ¯\_(ツ)_/¯ My brother has some the same thing and I think we’ll try to do a Zoom dinner. My parents live well out of the delivery zone, so they’re going to have to make other arrangements.

It's warm here in Texas, so we tend towards slightly lighter fare for Easter. My dad can't eat cheese, so I started using bacon as a flavor enhancer for a lot of things that often are "cheesy" for holidays. We have had 5 adults in our house for the last month, so I'm most worried about getting enough eggs for baking and for everyone to have a nice Easter morning breakfast! I might need to make pancakes to stretch out the egg consumption.

Easter dinner:
Ham
Potatoes - either scalloped or little new potatoes boiled and then pan fried with rosemary and oil
Green beans (likely with bacon)
Sliced cucumbers with rice vinegar and dill
Shrimp salad or scampi (possibly, idk if we will be able to get shrimp this year)
Rolls or biscuits
Possibly another "salad" either bean, pasta, orzo, or something else

Dessert: probably ice cream with brownies and fruit

Well this year Easter is also my birthday - so we'll do an Easter lunch and some sort of special dinner for my birthday. DD is insisting we need two desserts.

Breakfast:
Blueberry Croissant Puff overnight baked dish (if we can find everything, if not then just cinnamon rolls)
Fruit

For Easter lunch:
Maple crock pot ham
Stuffing (maybe homemade? but maybe stove top?)
Broccoli cheese bake
Potatoes - either roasted or mashed
Roasted asparagus
Decorated sugar cookies for dessert - will make with DD the day before

Haven't figured out what I want for dinner, maybe something on the grill so DH can make it :silly: . And then birthday cake for dessert.

We'll have a lot of leftovers, but DH and I are happy to eat them! Tried to keep it to things that will be easy to find but who knows?

Ok, so we'll still be "sheltered in place" for Easter, which means no big family meet up for dinner. Super bummed about that but want to think about what to make for dinner to make it special for the 4 of us. If I'm being honest, I'm not a huge fan of ham and I'm worried I'll only be able to find a big one for our small family but I've been outvoted. So ham it is and a lot will go into the freezer. :)

What are your holiday dinner plans? I have absolutely no idea what to make for sides. We're actually not a huge mac n cheese family because my husband is weird and doesn't like cheese. That really cuts out a lot of delicious things I would normally make! I would love to hear what your plans are to give me some ideas! I love to cook and am not turned away by complicated recipes. I do just want to be mindful of having to go to the store for specialty items and know that might drive what is ultimately on the table. Thanks!
