I went to high school in New England and our school had a farm. We tapped over 2500 maple trees and made maple everything all spring. Canada produces 85% of the world's maple syrup, and we are in prime maple forest region, so there are quite a few sugar shacks within a few hours drive. We go with DH's family every year, and stroll through the forest trails, looking at all the tapped trees. Then we partake of a traditional French Canadian meal of pea soup, bacon, sausage, syrup hardened in the snow, pancakes, and more maple syrup.
