<description>&#60;p&#62;I've been making oatmeal muffins/cupcakes lately.  You can tweak the mix-ins however you'd like...I do chocolate chips for my husband and plain for my daughter.  We even like them better reheated than straight from the oven.&#60;/p&#62;

<description>&#60;p&#62;We always have veggies (specifically tomatoes mushrooms onions and green peppers) pre-chopped/diced in our fridge. Also we always shred cheddar cheese and have it available to use. So a quick healthy breakfast is mixing all the veggies and cheese into scrambled eggs. The perfect combo is one ounce of cheese to one egg. We make 3 eggs with 3 oz chees and veggies and breakfast is ready is less than 10 mins for everyone.  To make it extra tasty I add fresh garlic if we have managed to press it in advance too. Oh and adding spices like basil oregano and pepper are good.   And finally we eat it with pita and hummus &#60;/p&#62;

<description>&#60;p&#62;I take ham/turkey slices push it into a cupcake pan, add red pepper, green pepper, diced tomato, diced onion, pour egg white and cover with a tablespoon of shredded cheddar.  Every one loves them and claims they taste like pizza. They stay good in the fridge for a few days or you can throw them in a freezer bag and reheat
