@Mrs. Bee: I have celiac so we eat gluten free! I love using chicken thighs marinated in tomato paste, gluten free soy sauce, and honey. Kind of like teriyaki chicken!

I also make pulled BBQ chicken in the crockpot. Frozen chicken breasts, root beer, and BBQ sauce. We cook it on low all day and DH eats it on a bun, I eat it with a fork :-)

I went to culinary school, so thankfully, celiac hasn't messed up my menus too much!

The sauce is amazing. I always double it and save it for other things.

chicken and rice porridge:

I use chicken fat to brown some chopped garlic. I take out the garlic and add ginger and some more chopped garlic, then I add the chicken bones and water to make a stock. Once the stock's done, I remove the bones and I add rice. Cook until it's porridge.

Separately, I take the chicken skin, chop it and slowly render some of the fat out, then turn up the heat to make the skin crispy.

Just before its time to serve, I take the chopped chicken meat and add it to the porridge. I let it rest off the heat until it's just cooked through. Spoon into bowls then sprinkle some of the browned garlic and chicken skin on top. Spoon some garlic oil as well, garnish with chopped green onions.

Probably my favorite thing to cook whenever either of us are sick.

This is a SUPER easy recipe, but it's really good (if you like spicy food): rub chicken breasts with cayenne pepper, salt, and regular pepper, and then serve it with a salsa made of avocado, red onion, and lime juice. We like to make this when we don't feel like cooking because it's so easy to throw together, and the spicy chicken tastes so good with the creamy, cool avocado!

I've made this sweet and sour chicken a few times.

http://life-as-a-lofthouse.blogspot.com/2010/09/baked-sweet-and-sour-chicken-with-fried.html

It's really good and I like that the chicken isn't deep fried. I found it on Pinterest and someone wrote that it's only 7 points on Weight Watchers but I don't know how accurate that is.

@boiledpnut my husband loves to make that and it's so yummy! I wish it wasn't pouring outside so we could bbq it.

I love this recipe for Coconut Curry Chicken Soup http://damndelicious.tumblr.com/post/34963196522/coconut-curry-chicken-soup-sundaysupper

I also make Parmesan chicken pretty regularly.
chicken breast, dredge in egg (mix in worchestire and soy sauce), then flour, then seasoned breadcrumbs or panko with grated or shredded parm cheese mixed in, I broil it until cooked through in a 9x13 baking dish. Serve it with rice and veggies.

Chicken & rice soup. I make it with fresh ginger & red chile pepper for a bit of a bite, and broccoli, mushrooms, chicken stock, chicken & rice. So yummy :)

My family really enjoys Teriyaki chicken. It's broiled, deboned chicken thighs, served with a home made Teriyaki sauce on the side. Very moist since it is broiled and not anything like the stereotypical teriyaki chicken. We use the Cooks Illustrated recipe. Serve with rice and a vegetable.

crockpot brown sugar chicken is to die for. Of course it has sugar in it and soy sauce so we haven't had it in a while but it is very yummy.

This is my favorite: http://jamiecooksitup.net/2011/10/crispy-cheddar-chicken/

This chicken is delicious! Discovered it on pinterest and DH absolutely loves it. I use bread crumbs instead of Ritz because I always have them on hand and just sprinkle the cheese on top because it's easier and tastes the same. (I'm a recipe cheater!) It would be good without the sauce, but the sauce is yum and is great with mashed potatoes!

Cornish hen with some herbs. It makes a delicious soup and you have the whole chicken as a meat also! I eat it with rice. Super simple to make as it just stews on the stove top or you can toss it in the crock pot. Add a bit of seasoning (sugar, salt, etc.) and donesky!

I make chicken stir fry because everyone loves it (I don't). It's chicken, ginger, garlic, chicken stock, coconut aminos (soy sauce alternative), arrowroot powder (corn starch alternative), and whatever veggies I have on hand (today it was mushrooms, peas, and broccoli). Easy peasy.

I also make green chicken curry because Mr. Bee loves it. chicken, green curry paste, fish sauce, garlic, chicken stock, coconut milk, and whatever veggies I have on hand, although I often toss it into the crock pot so I use heartier veggies like carrots, onions, bell peppers. If I'm using soft veggies like broccoli, I toss them in towards the end of cooking.

What are your favorite chicken recipes? Let's share meal ideas!
