<description>&#60;p&#62;DH who doesn't usually see soup as a meal, WILL eat hearty soups like chili if there's bread and salad (and dessert!).  One soup he will eat for breakfast, lunch and dinner is my beef and vegetable soup.  Its not a tomato-based soup - we like our's straight.  It makes a TON and cooks in the crockpot beautifully (or in a big soup pot slowly simmered for 1-2 hours, or until the meat is tender).  The weird part of this soup is that it uses some canned veggies.  I eat frozen or fresh for just about everything, but they don't get soft enough!  For some reason in this recipe, for me, it has to be canned.&#60;/p&#62;
&#60;p&#62;1.5lb beef stew meat (I like to cube up chuck roast)&#60;br /&#62;
Water or beef broth&#60;br /&#62;
1 onion&#60;br /&#62;
1-2 cloves minced garlic (or a few sprinkles of garlic powder)&#60;br /&#62;
2 bay leaves&#60;br /&#62;
1 cup each carrot and celery, chopped&#60;br /&#62;
1 russet potato, cubed&#60;br /&#62;
1 can of peas&#60;br /&#62;
1 can of green beans (sometimes we add 2 - the soft green beans are so good in this recipe!)&#60;br /&#62;
1 can of corn&#60;br /&#62;
Salt and pepper&#60;br /&#62;
1/2 teaspoon thyme, optional&#60;/p&#62;
&#60;p&#62;1. Brown the beef with a little salt and pepper (we like Montreal Steak Seasoning).  You can skip this step if you're pressed for time - its still good.&#60;br /&#62;
2. Add all the veggies, bay leaves, and thyme.&#60;br /&#62;
3. Fill your crock or pot to the top with water or broth.&#60;br /&#62;
4. Simmer over low heat or on LOW until the meat is tender (1.5-2 hours on the stove, 6-8 hours in the crockpot).&#60;br /&#62;
5. Skim fat if needed.  Season with salt and pepper.  DH likes a few shakes of hot sauce over his bowl.  Serve with hot bread!

<description>&#60;p&#62;I used to make a vegan potato kale soup all the time when I was broke and it is realllllly delicious.  Its just a pot of water with a LOT of garlic (4-5 cloves chopped at least), some chopped up russet potatoes, and a head of kale with salt and pepper.  The key is to add several shots of vinegary hot sauce (like Red Hot or Crystal or Texas Pete's) to your bowl.  The kale and garlic make a very flavorful broth and the potato fills you up.  I actually made it with sausage once and liked the vegan version a lot better!

<description>&#60;p&#62;I *love* soup.  Lately my favorites have been Emeril's vegetarian chili, carrot-ginger, minestrone, chicken and barely with vegetables, sauage-white bean-kale, and posole.  &#60;/p&#62;
&#60;p&#62;My husband is not a fan (he calls soup SINAM - &#34;soup is not a meal&#34;) and gets annoyed that I make it soooo much during the cooler months.  Oh well.   :silly:  I make a big pot of soup every weekend and eat it for lunch every day.  Plus, soup is such a great toddler meal - I just strain the broth and she goes to town.
