&#60;p&#62;Have you tried baking the pankcakes and then cutting them in squares?  I saw a pancake recipe on Pinterest and thought was a great idea for when you want to serve pankcakes for a large group and don't have a giant griddle. &#60;/p&#62;

<description>&#60;p&#62;@sandy:  no problem :) I'm a monster in the morning so I have to have food precooked and ready to go otherwise it's a disaster. My LO is the same way, loves her carbs so the frittata was my way of putting some veggies and protein into the routine. FYI, she didn't love it right away, it took about a week for her to warm up to it, but now she scarfs it down.&#60;/p&#62;
&#60;p&#62;For the pancakes, I sort of improvised my own recipe. I start with 2 ripe bananas and mash them up, followed by whatever other fruit is a getting too ripe diced up. I mix in a couple of eggs, and I use Bob's Red Mill Gluten Free Pancake mix and mix in half a bag. Then I add a little of whatever milk I have in the fridge (rice, flax, coconut) and I whip it up with my immersion blender. It's not very scientific, I add more mix or milk to get the right consistency and make a ton of pancakes in single service sizes and then freeze them for daily use :)

<description>&#60;p&#62;@sandy:  I grate 2 or 3 carrots, 2-3 parsnips and 2 zucchinis and put them in a frying pan with a little butter (or oil or whatever you use) and saute that mixture until it's softened down. Let that cool a bit (you don't want to scramble your eggs when you mix it together). I whisk up 6-8 eggs then put the veggie mixture in a rectangular casserole dish. Pour the egg over top and mix it in with the veg. Bake at 350 for 10-30 minutes until it sets up and is firm. Let it cool, and cut into squares. I freeze them in the squares and pull out one or two every morning for her.

Proteins:&#60;br /&#62;
- Sausage or meatball&#60;br /&#62;
- Cold cuts&#60;br /&#62;
- Yogurt or cottage cheese&#60;br /&#62;
- Nut butter (almond or peanut) on bread or wrap or fruit&#60;/p&#62;
&#60;p&#62;Fruit:&#60;br /&#62;
- Banana, apple, grape, pear, berries... whatever&#60;br /&#62;
- Prune (LO has at least one a day, often two)&#60;/p&#62;
&#60;p&#62;Carbs:&#60;br /&#62;
- Whole grain waffle, wheat bread, whole wheat tortilla/wrap&#60;/p&#62;
&#60;p&#62;Also, sometimes I'll throw some fruit and tofu and yogurt into the blender and make him a smoothie and let him drink it with a straw.&#60;br /&#62;
Finally, while these are sort of the &#34;breakfast-y&#34; foods that we do often with LO, he doesn't care if we give him &#34;non-traditionally-breakfast-y&#34; foods, so he often ends up with beans, olives, peas, carrots, etc. &#60;/p&#62;
&#60;p&#62;I think this morning LO had some Asian pear, prunes, carrot chips, peanuts, and dried green beans.
