Chicken wrap! Heat up a sprouted grain wrap, smear a bit of avocado on it, put lettuce, a few slices of tomato, some slices of red onion, some chicken (shredded), and you can add some black beans and heated up corn too (which I usually don't and it still taste so good). I like to add some (well a lot) dijon mustard on it but I think you can try caesar salad dressing also. Wrap it together, bottom first and two sides, with a foil holding the wrap together. So good, low carb and very healthy.

I always make either a thai curry or a chicken curry using bottled curry sauce (either from our grocery store or Trader Joe), with a mix of frozen "stir fry" vegetables or a frozen mix of onion/red pepper/green pepper. Served with rice.

I make this almost once a week because my kids love plain rotisserie chicken, but my husband really dislikes it--so I pull theirs off to eat plain, and pull the rest off to make a curry for me and DH.

Our favorite is to shred it and toss it with a mixed green salad and balsamic vinaigrette. Throw in some toasted pinenuts and it's amazing!

We do chicken salad (traditional with mayo, celery and white onion or with grapes and walnuts or with curry, raisins and avocado). Chicken enchiladas, soup (Greek lemon chicken orzo soup is something a little different but still easy to make), risotto, add BBQ sauce and make pulled chicken sandwiches or salad. You could also just freeze it

Chicken shawarma. Chop up the meat and toss with olive oil, lemon juice, oregano, and a little curry powder (or cumin, coriander, paprika, etc). Then sizzle in a pan with olive oil,
chopped onions, and garlic until brown and crisp. Serve in pita bread, lettuce, tomato, and yogurt sauce.

I did a chicken enchilada casserole most recently with leftover chicken...layer strips of tortilla with the shredded chicken, black beans, and corn, sprinkle with cheese, drizzle enchilada sauce, repeat layers 2-3 times, top with cheese and bake at 350 for 15-ish until cheese is melted and sauce is bubbly.

I bought the rotisserie chicken thighs from Costco, but tired of just eating it plain. Any ideas of how else to use it?
