This mochi cake recipe is really easy and yummy: http://weekofmenus.blogspot.com/2010/07/mochi-cake-proof-that-being-competitive.html. I've changed it up by adding blueberries, blackberries, and raspberries.

Once I get muffin tins, I'm going to make the mini-muffin version: http://weekofmenus.blogspot.com/2010/07/blueberry-mochi-mini-cake-when-days-are.html.

I would recommend muffins. For one, you generally mix all the dry ingredients together and then add the wet. Unlike cookies which you start off mixing butter sugar and eggs usually. With muffins you can let LO stir to his heart's content and then add things like eggs at the last minute. They are also easy to make healthy. An applesauce oatmeal muffin is a good place to start.

A baking with kids hack that I came up with this weekend is getting an empty spice jar and measuring all the spices into it. Then your LO can shake it in and you don't have to worry about the amount being off. Mine loves the shaking part.

I just made this a couple weeks ago, it was great and very easy! http://smittenkitchen.com/blog/2013/10/purple-plum-torte/

Plus my hand mixer wouldn't work, so I ended up just mixing it up by hand, and it was fine. So no mixer needed if you don't have one.

for baking with kids, I would stick with cupcakes, brownies, muffins and also homemade chocolate.

With homemade chocolate, essentially, youre just melting down chocolate, pouring it into a mold, chilling and then voila, chocolate! But the whole process is completely kid friendly.

cupcakes, brownies and muffins are good because the batter isn't too difficult to mix. I think cookies require arm strength that kids don't have.

If you don't bake and want something super easy ... buy lemon cake mix or chocolate cake mix. Add in 1 tub of cool whip (8 oz) and 1 egg. Mix. it will be sticky. Grab a small spoonful, roll it around until it's a ball and then roll it around in powdered sugar. Put on the baking sheet about 1" apart because it will spread. Bake for 11 minutes at 350. It will seem really soft when you pull them out but you have to wait until its completely cool. voila, crinkle cookies that are so good you'd never know it was from a box mix. Plus there's no leaving butter out to soften.

I also let Paige do yogurt drops. I give her a parchment sheet, let her drop yogurt onto the sheet and we freeze them as treats.

Or you can make shortbread cookies and have them cut out the shape (like playdough).

Most quick bread recipes (ones that do not have to rise like banana or pumpkin bread) should be fine without a mixer.

Charlie loves to cook, and I think baking would probably be the most fun for him, but I'm not a baker. The only things I've ever baked are cake in a box and store bought cookie dough.

What are some easy things I can bake with Charlie? I also don't have a mixer so nothing too complicated!
