<description>&#60;p&#62;I keep those Purdue perfect portions chicken breasts on hand so that I have a quick easy meal to throw together.  I'll saute one of those and make some brown rice and a salad.  Or I'll just make brown rice and throw some frozen peas and corn in.  But I'm definitely guilty of just picking up a WaWa hoagie.

<description>&#60;p&#62;@daniellemybelle:  you can make healthy nachos babe! Byerlys has these awesome organic blue corn and flax seed chips. All the ingredients are very healthy. Get a healthier cheese, I like raw milk cheddar cheese from trader joes, or any other unprocessed cheese. I like to make a side of guacamole too which is extremely healthy if you make it from scratch without one of those &#34;guac mixes&#34;, just avocado, tomato, onion, like and cilantro!

I think it's hilarious that so many of you make food your DH doesn't like when he's gone. :) My DH doesn't really like sushi so I usually eat that multiple times while he's out of town, but it's expensive and I'm trying to save money!&#60;/p&#62;
&#60;p&#62;A lot of you suggested salad... I freaking hate salad. I keep trying and sometimes if it's a fancy restaurant salad with lots of bacon and dressing I like it, but I pretty much hate any remotely healthy salad.&#60;/p&#62;
&#60;p&#62;@hellobeeboston:  Risotto sounds so good! There's actually a little restaurant around the corner that makes the best risotto... though I guess the point was for me to cook, right? Haha!&#60;/p&#62;

&#60;p&#62;My go-to dinners alone are:&#60;/p&#62;
&#60;p&#62;Pasta. I’ll usually do a smallish bowl of pasta (red sauce, pesto, alfredo, whatever) and a big salad. Or, sub gnocchi for pasta for something a little bit different. &#60;/p&#62;
&#60;p&#62;Fideo (I think it’s also called Mexican spaghetti?). Just break up spaghetti noodles and fry up in oil until browned, add water and tomato sauce, cumin and oregano and cook until pasta is done. I also add red pepper flakes so its spicy. Top with some grated cheddar cheese.&#60;/p&#62;
&#60;p&#62;Salads with something on the side: fish, polenta, roasted veggies, etc.&#60;/p&#62;
&#60;p&#62;If you have a BJ’s near you, they actually have really nice frozen seafood that comes in bags – with the seafood in single serving freezer baggies. I’ve tried the sockeye salmon, tuna steak, flounder and jumbo shrimp and all are very good and a good value. Easy to thaw, top with whatever marinade you like and broil/pan sear/grill.

When I have leftovers though, I freeze them in individual portions so that my husband can easily grab one in the morning for work, or else I have a quick lunch!&#60;br /&#62;
Otherwise I will usually eat a big salad, then some kind of side, like carrots and hummus, grilled cheese, whole wheat pasta with vodka sauce(love the premade stuff from trader joes!), Italian bread with olive oil/balsamic..&#60;br /&#62;
Individual fish fillet with a side of steamed fresh veggies (broccoli and carrots are my fave!) and a cup of rice.&#60;br /&#62;
Make a big pot of soup, and save the rest for lunches.&#60;br /&#62;
Tuna melt&#60;br /&#62;
Grilled chicken, rice and stir fried Veggies, or instead of rice, substitute cabbage- super yummy!&#60;/p&#62;
&#60;p&#62;Hopefully this gives you some ideas :) I usually keep it simple the nights he works too
