There are some things that are just so much better cooked that way, and it is also a very stable oil, so much better than, say canola, for some recipes. If you are throwing it away, send it to me! I sometimes cook bacon just to get the fat to use for cooking! If there's too much, or if the dogs have already had bacon grease recently we just throw it away in the trash. It's good added to pea soup. Try frying your grilled cheese in it. If you're going to dispose of it, do like others have said and chill it. You can use an old plastic container (e.g. a butter container) in the freezer and add grease until it's full, and then chuck the whole thing in the garbage. It works for any grease, not just bacon.
