We usually do:
oatmeal and fruit or eggs, bacon and bagels for breakfast
plus COFFEE

salami, cheese, crackers, veggies (carrots/tomatoes/cucumber), hummus, fruit, or tortilla wraps with lunch meat or almond butter/jelly for lunch. We try to bring things that transport easily because we are usually hiking/adventuring for lunch.

My favorite dinners are:
sausages/peppers/onions with rolls and steamed broccoli
pre-marinated chicken (can be done ahead and frozen so it defrosts by night two) with veggies (both grilled) and a vinaigrette based potato salad (made ahead)
steaks, broccoli, foil wrapped baked potatoes
sometimes I make chili ahead of time, which reheats beautifully!

and s'mores of course!

I'll lead by saying on vacation I usually throw nutrition out the window to some extent.

Breakfast: Something easy most days (like bagels, cereal, fresh fruit) with one day planned for some type of egg scramble (eggs, meat, cheese, potatoes all cooked together)

Lunch: Sandwiches. I try to bring a good assortment so you can switch it up daily (turkey, ham, bologna, cheese, pbj, roast beef, etc.) and everyone builds their own.

Dinner: Pudgie Pies! made in these (https://www.amazon.com/Rome-Industries-1705-Sandwich-Cooker/dp/B000FNLXWG) These are fun for littles too because they can create their own. You could do savory for dinner or sweet dessert pies (peanut butter, fluff, nutella, bananas, strawberries, etc.)
I tend to go pizza themed so pizza sauce, mozzarella cheese, and various pizza toppings like pepperoni, sausage, peppers, etc. But use your imagination and fill with anything!
If you have a grill you could do individual pizzas on the grill (buy pre-made pizza dough) and everyone gets to top their own
Hamburgers/hotdogs/brats

We wrap biscuit dough around a stick and toast it over a fire for breakfast. Sausage and hard boiled eggs are easy too. Sandwich/salad stuff for lunch. Hot dogs or packet dinners.

I have everything prepared and organized in the cooler before we go. But we only "cook" dinner.

Breakfast is boil some water and make coffee and instant oatmeal packets with fruit.

Lunch is sandwiches, chips, carrots and celery, fruit.

Dinner is usually foil packet dinners prepared at home cooked in the fire with boil in a bag rice. So easy, and you can customize for each person, and each day so it isn't the same.

Dessert is smores, of course!

I cook everything ahead and that way saves any prep or cooking thoroughly while camping!

What about chicken fajitas? I chuck chicken in the crockpot, pull it once cooked, then wrap in foil. Precut all veggies, shred cheese at home, then whatever else for toppings in small containers and all into the cooler :)

Tacos in a bag (I think other regions call these "walking tacos" ha). I've precooked and shredded chicken, so we just had to heat it up (or leave it cold) and add BBQ or buffalo sauce for wraps or sandwiches. Make and freeze breakfast burritos so you just have to heat them up. Lots of snacks :) And sunflower seeds or peanuts in the shell!

Breakfast: Instant oatmeal

Lunch: cheese and crackers, apples, carrots, jerky, etc. Easy snack-type stuff

Dinner: hot dogs and chips, or grilled cheese. We do the grilled cheese in pudgie pie makers

Snacks: tons of chips, marshmallows, and s'mores!

breakfast is usually cereal or yogurt, pancakes and eggs. (so an cold option and a hot option, not on the same day). lunch is snacks and sandwiches (either deli meats or pb&j). dinner can be foil dinners, hot dogs and mac and cheese, spagetti and meatballs. we keep it simple, but sometimes DH does like to do something "fancy" depending on how many nights we're gone.

She has a lot really good ideas and most are fairly easy. I've done kabobs on the grill over the fire. Prepped them at home so it was easy to cook. We've done baked potato bar, super easy to cook in foil on the fire. We usually do chili dogs one night and I shred the cheese before we go.

For us I try to prep as much as I can at home to make it easy once we are out there.

We usually do breakfast wraps (cook scrambled eggs and bacon on the camp stove, pre-cook some hash browns and heat them, bring a bag of shredded cheese, roll it up in a tortilla). We often to tacos, precooking the meat so it just needs to be heated. Or spaghetti and meat sauce - again, precooked meat.

You can make eggs/bacon pretty easily if you are bringing a pan and a camp stove. Pretty sure I saw a blog or article somewhere where people make the can of cinnamon rolls on a camp stove.

For lunch, you could just bring a cooler with sandwich makings, fruit, chips, etc.

You can do baked potatoes in a few foil layers near the edge of the fire sort of-takes a while to cook. Can slice them in cubes and package with butter in a foil package and cook in the fire. You can do this with corn on the cob too.

I haven't been camping in a few years, but I usually take apples, chips, twizzlers, and veggie dogs and snack for two days. I always feel like garbage after. Haha.

Normal foods. We usually bring something quick/easy for breakfast (cereal or poptarts...bagels would be easy too).
Lunch = sandwich stuff
Dinner = Hot dogs/Hamburgers

I guess it depends on if you have a camp stove or not, but we usually bring beans for a side for dinner and soup & chili for back up foods.
