Chicken Parmesan with a great big salad. By Christmas we are over the turkey and ham scene and it's a nice change!

A typical meal consists of ham, string beans, potato salad, candied yams, split pea soup. One year when I was in HS I took over the cooking and we had pork tenderloin, wild rice, braised red cabbage and some other stuff that I picked up directly from a magazine with Oprah on the cover- before O!

I never quite understood why my mom always makeso potato salad for Christmas since that seems like a warm weather food.

@mediagirl: What about doing a roasted chicken with all the sides, probably a little more budget conscious but still delicious. Or a roast, you can never go wrong with roast!

My family does turkey with all the fixing for lunch, so for dinner we usually do leftovers.

We usually have beef tenderloin, either mashed potatoes or roasted rosemary potatoes, asparagus with proscuitto, a salad, and rolls. We usually spend Christmas at my BIL's house.

This year we'll have a newborn, and my IL's are bringing us dinner, so I have no idea what it'll be.

We try to do different things every year. We've done ham, turkey, brunch, cheese fondue--with salads and sides--spaghetti, lasagna, tri tip roast, and a few others I'm sure. This year, we're doing tri tip roast, cheese fondue with homemade pretzel bites, roasted red potatoes, and a few make ahead salads.

We've done beef tenderloin in the past, with green bean casserole, mashed potatoes, etc. It's just the 4 of us (and let's face it, DD1 won't eat anything I make that's not a carb), so I was thinking about doing braised short ribs and polenta or mashed potatoes and maybe some kind of sautéed greens.

@mediagirl: if you want to do similar to last year's dinner but save $$, what about getting a cheaper (tougher) cut of meat but marinating it for a couple days so it is super soft? And use canned crab to save $$ on crab cakes - or make salmon cakes with canned salmon - even cheaper and delicious too!

Or look for sales on big porterhouse steaks and then split them between 2-3 people.

I'm cooking for me, DH, and another couple this year -- first time hosting! I'll probably just copy my mom and make beef tenderloin with a red wine/shallot/butter sauce, some kind of potato (mashed or roasted), asparagus or brussels and maybe a salad.

When my mom hosts she usually does beef wellington, asparagus with homemade hollandaise sauce, a winter salad (like spinach with pomegranate seeds, dried cranberries, etc.) and homemade rolls.

I'm not sure what we're doing this year - my mom is hosting Christmas brunch and I think MIL will host Christmas dinner, which will likely mean ham.

@Mamaof2: ehhh.... we're not real strict about it.... My other aunt and grandmom cook the dinner... Appetizers: crab dip and crab wontons, shrimp cocktail, fried shrimp, raw clam shooters (plus: other dips, cheeses, bruchetta, etc) Dinner: Whatever is left from the appetizers goes on the buffet table, cold calamari salad, crabs and spaghetti, flounder, smelts (sort of like fried anchovies), baccala (fried salted cod), Fried scallops, crab imperial, and a garden salad. The smelts and the baccala are very traditional and only some people like them.... the others are a more modern addition from my aunts recipes.
