<description>&#60;p&#62;Almost always leftovers! On the weekends when I'm home with M I make noodle soup a lot lot because she loves it. I always save leftover broth  in a quart container. Add noodles and whatever veggie or protein I have leftover. Quick, easy, cheap and perfect in the winter!

<description>&#60;p&#62;I usually eat leftovers. I'm dairy and grain free so that's how I make our dinners and I make enough for me to eat the next day. If I don't have leftovers I make a smoothie (almond milk, ice, mixed fruit, half a banana, spinach and half a scoop of protein powder).

<description>&#60;p&#62;I eat a lot of mason jar salads - I make 4 every Sunday and eat them Monday-Thursday. Squishy stuff like tomatoes on the bottom, crunchy stuff like lettuce on the top. I pour a tbsp of dressing in, shake it up, and then dump it on a plate. Plus leftovers, usually.

<description>&#60;p&#62;I usually have a spinach salad with bacon or chicken for protein. I top it with tomatoes and cucumbers and tomato basil dressing. I'll have laughing cow cheese with crackers and a piece of fruit. I make two lunches ahead of  time so I can stick to the script.  I will eat soup and toast when I take a break from the salads. I am not a health nut by any means but I'm trying to eat better. :)

<description>&#60;p&#62;@sandy:  I do make my own. I only use eggs, mayo, mustard, salt &#38;amp; pepper. I don't like crunchy stuff in my egg salad. I used to hardboil and peel my own eggs, then I discovered my grocery store sells hard-boiled eggs that are already peeled, so this saves me tons of time. I basically just chop up 2 eggs and put them in a bowl. I add a big dollop of mayo (I use the Kraft kind made with olive oil, so it's a little healthier) and just a small squeeze of yellow mustard. Mix it up and add a pinch of salt and pepper. The amount of mayo and mustard I add isn't an exact science--I kinda just add enough til the consistency looks right. &#60;/p&#62;
&#60;p&#62;I am totally incompetent in the kitchen, so I am confident you can do this if I can!

<description>&#60;p&#62;I usually bring a large tub of yogurt to work to put in the fridge. other snacks i have in my office include Kind bars, peanut butter powder, mixed nuts (both to throw in the yogurt). Lunch will usually be a small sandwich on a whole wheat english muffin, boiled eggs, some type of salad and soup. pretty simple!

<description>&#60;p&#62;I look up cold salads on foodgawker and make a whole batch for the week - I just made a winter veggie salad with farro for this week (actually is supposed to be warm but I tried it cold and it's delish), and sometimes in the summer I do a greek orzo salad. It's awesome because you can use the salad for family side dishes at night, too!

<description>&#60;p&#62;I generally make myself lunch at home (my work day starts at 1 p.m.) I've recently been into roasting sweet potatoes, Yukon gold potatoes, red peppers, brussels sprouts and chicken sausage. I'll just toss it all in a little olive oil, garlic, salt, and pepper. Sometimes I'll add smoked paprika for some different flavor. I also like to top with sriracha sauce. Sometimes I leave out the chicken sausage and top the roasted veggies with a fried egg. Yummy and filling!
