Crushed ritz crackers mixed with some butter (like a crumb topping). Add spices as you like! Then bake and broil towards the end to crisp up the top. A restaurant I worked at did it this way. DH is a commercial fisherman, so we get a lot of very fresh fish, specifically striped bass and bluefin tuna. I also like salmon and swordfish.
