I take a bunch of fresh mint and coarsly chop it then stir it together with olive oil and a bit of coarse salt. I smear the filets with the mustard on the non skin side, I like a lot so its a pretty solid layer - my mom does a lighter coating. I lay them on a cookie rack on a foil lined jelly roll pan to make clean up easy!</p> <p>In a small food processor or blender combine the panko, zest, walnuts and oil to make a "topping". Using your fingers press it on to the mustard covered file to have a nice coating.
