&#60;p&#62;We used the kings Hawaiian rolls and sliced them in half and put ham and cheese on them with some melted butter on tops of the rolls.  Heat in the oven and then cut into slider/sandwiches.  Probably could modify to be like a Muffuletta sandwich.

Although it'd rather have beignets than king cake. You could maybe do shrimp cocktail? Or serve potato salad, which doesn't necessary scream New Orleans, but a lot of people serve with gumbo. And maybe a hurricane type punch to drink.
