<description>&#60;p&#62;I really, really appreciate how attainable most of these ideas are for a WOHM household with a toddler who starts the meltdown process about a minute after we get home. And the honesty from everyone admitting to chicken nuggets, etc. is awesome. I so often feel like I have to justify or make excuses for feeding C &#34;easy&#34; meals that aren't homemade.&#60;/p&#62;
&#60;p&#62;In rotation at our house now (admittedly not much):&#60;br /&#62;
Chili&#60;br /&#62;
Rotisserie chicken&#60;br /&#62;
Tortellini with some sort of sauce&#60;br /&#62;
Scrambled eggs&#60;br /&#62;
Hot dogs (C was on a meat strike for the longest time and this was the ONLY form of meat she would eat.)&#60;br /&#62;
Tacos&#60;br /&#62;
Tuna sandwiches&#60;br /&#62;
Tomato soup and grilled sandwiches

<description>&#60;p&#62;So our husbands are on the same schedule, and I've found it's easiest to make something on the crockpot while DH is still home in the morning, and then it's ready for the girls and I at dinner! My fave &#34;make-ahead things&#34; are:&#60;/p&#62;
&#60;p&#62;-chicken tortilla soup topped with avocado and cilantro&#60;br /&#62;
-white chicken chili (so delicious and guilt free)&#60;br /&#62;
-pulled pork with rice and pineapple&#60;/p&#62;
&#60;p&#62;I think you might work in the am/afternoon, and if that's the case, the first two things can be thrown together in a stovetop pot really quickly.&#60;/p&#62;
&#60;p&#62;My girls LOVE roasted broccoli and brussel sprouts, so I find myself making those OFTEN and serving them with Annie's macaroni or chicken nuggets when I need to throw something together. No shame! &#60;/p&#62;
&#60;p&#62;I don't know if you like to/can grill, but kabobs are pretty easy to to do too! My fave combo is chicken, bell peppers, onions, mushrooms, and pineapple.&#60;/p&#62;
&#60;p&#62;Other things I make often:&#60;br /&#62;
Turkey tater tot casserole&#60;br /&#62;
Turkey red sauce over spaghetti squash (girls love thiS and the &#34;noodles&#34; are so easy for little ones to eat)&#60;br /&#62;
Take and bake pizza (that counts? Right?) with caeser salad....

<description>&#60;p&#62;We have been doing Fresh 20 too, but if there is one meal I want to skip, or on weekends, we either grill chicken breasts rubbed with oil &#38;amp; poultry rub, broil fish, make crock pot ribs or pulled pork, pasta w/ meat sauce, or just heat up frozen asian chicken and make rice &#38;amp; veggies for a side. One thing that has helped a lot is my husband decided to do most of the prep for me on Sundays. He enjoys the chopping/mincing/grating and it makes things go a lot quicker for me during the week.

&#60;p&#62;- Soba noodle salad with julienned vegetables and some kind of protein (tofu, shrimp, whatever) dressed with a soy sauce/rice vinegar/sugar sauce.&#60;/p&#62;

<description>&#60;p&#62;Taco soup (sorta like chili but with a can of corn + taco seasoning, serve w/tortilla chips) - DH's fave&#60;br /&#62;
Spaghetti (jar sauce + ground turkey)&#60;br /&#62;
Egg casserole/quiche (I saute vegetables like zucchini and onion w/garlic, salt, etc. then spread out in a casserole dish, stir up ~8 eggs, milk, s&#38;amp;p, pour over, add cheese, bake)&#60;br /&#62;
Grilled cheese + can tomato soup (not healthy, but fast - lol)&#60;br /&#62;
BBQ pulled chicken in the crock pot (froz chx breast, a little Italian dressing, your favorite BBQ sauce - shred and eat as sandwiches)&#60;br /&#62;
Tacos sometimes&#60;br /&#62;
Santa Fe chicken in crock pot (frozen chx breast, can Rotel, can corn, can black beans, garlic powder, s&#38;amp;p, crushed red pepper, block of lowfat cream cheese - cook &#38;amp; shred chicken, serve over rice)&#60;br /&#62;
Taco casserole: cook gr beef/turkey w/refried beans + salsa on the stove, add a little taco seasoning. Spread mixture on casserole dish; top with cheese, broken up tortilla chips, tomatoes, olives - add fresh lettuce shreds after baking&#60;br /&#62;
Balsamic crockpot chicken: froz chicken breasts in crock pot. Make seasoning mixture of s&#38;amp;p, garlic powder, onion powder, ital seasoning (whatever you like), mix and pour over chicken - add minced garlic and 1/2 a diced onion, and 1-2 tbsp olive oil - pour 1/2 c. balsamic vinegar over all. Smells yuck but tastes great&#60;br /&#62;
Stuffed pepper casserole: cook green pepper strips, ground turkey/beef, s&#38;amp;p, garlic/seasonings on stove. Mix that w/cooked rice, can of tomato soup. Put in casserole dish w/cheese on top.&#60;/p&#62;
&#60;p&#62;I try to make extra of these recipes and freeze for quick meals. We usually eat them with fresh salad/veggies or frozen vegetables.

&#60;p&#62;I like to make a roasted chicken one day, maybe some sort of chicken casserole in between, and then chicken soup the next. &#60;/p&#62;
&#60;p&#62;Pot roast in the crockpot and then Closet Cooking's Pot Roast Soup with Mushrooms the next. &#60;/p&#62;

&#60;p&#62;- Baked fish (usually salmon, cod, or mahi mahi) with rice and a salad.&#60;br /&#62;
- Honey bbq baked chicken (literally just mix bbq sauce with honey and a little ground mustard) with rice/potatoes and a roasted veggie.&#60;br /&#62;
- Make your own pizza.&#60;br /&#62;
- Bean burritos.&#60;br /&#62;
- Giant salad topped with either hard boiled eggs or tuna.&#60;br /&#62;
- Rice noodles with peanut sauce, chicken, and broccoli.&#60;/p&#62;
&#60;p&#62;And in fall/winter I have two trusty crockpot soups I rotate: pasta fagioli and salsa chicken and black bean soup.

<description>&#60;p&#62;I make the same things over and over, and I revolve what we eat around what my 14 month old can-and-will eat. And my husband won't eat pork at all and will only rarely eat beef.  So I have a lot of constraints.  So we have:&#60;/p&#62;
&#60;p&#62;-eggs almost every single day for breakfast&#60;/p&#62;
&#60;p&#62;lunch and dinner are the same rotation of foods every week:&#60;/p&#62;
&#60;p&#62;-chicken meatballs in pasta with veggies&#60;br /&#62;
-turkey burgers&#60;br /&#62;
-thai curry with chicken and vegetables (with rice)&#60;br /&#62;
-indian curry with chicken and vegetables (with rice)&#60;br /&#62;
-salmon and vegetables with a grain like quinoa&#60;br /&#62;
-homemade pizza&#60;br /&#62;
-rotisserie chicken with a vegetable&#60;/p&#62;
&#60;p&#62;I make the same vegetables over and over, so I always have some on hand for LOs daycare lunches and her dinners:&#60;/p&#62;
&#60;p&#62;steamed broccoli, steamed peas, steamed cauliflower, lima beans, green beans, mixed zucchini and summer squash, butternut squash, and roasted sweet potatoes.  Most of these things are bought frozen so they last.&#60;/p&#62;
&#60;p&#62;I also always have the same (usually frozen) fruits on hand for LOs snacks: blackberries, blueberries, strawberries, and bananas.  Grapes when in season. Mangos and Avocado make an appearance a couple times a month.  And the fruit cups in monk fruit juice are a fave for her.&#60;/p&#62;
&#60;p&#62;Sometimes I get creative and do something new, like I've recently found good recipes for a good curried lentil entrée and a really good Carne Asada crock pot recipe.  But I only do something new about once every other week.

&#60;p&#62;We like to prep meals on Saturdays and Sundays - it makes things so much easier! We'll prep any casserole and chop veggies and throw meat in marinades - the meat and casseroles we freeze if it'll be more than 2 days before we eat them.
