@mrs. wagon: Honestly when I have a mash of stuff in the fridge I pull it all out and we have a buffet!

I roll up some deli meat for the kids - give them some mozzarella balls and some carrots along with fresh fruit.

DH and I would finish the chicken, sauté the zuc in some butter with onions, and make a small salad with the lettuce, tomatoes and cheese and carrot!

@T-Mom: make a frittata with your most questionable produce, cheese and eggs.

peppers
turnips
radishes
salad greens (a couple handfuls)
celery
carrots
mushrooms
eggs
assorted cheeses (the cheap kind not the fancy kind)
ham
parsley
rosemary
apples
Gruyere, cheddar
Baby spinach
Unidentified frozen meats, possibly beef
the carrots and zuchinni could be cut into sticks and roasted, kids might love that! make a dipping sauce with the greek yogurt?

@mrs. wagon: she climbs up into her learning tower the instant we get home and starts asking for something, anything. I usually give her frozen peas or whatever fruit we have in the fridge. Even the process of getting peas out of the freezer, dumping them in a bowl and putting them in front of her sometimes isn't fast enough!

Last night I gave her a Nutri-Grain bar, it was the only thing within reach...She still ate a good dinner!

@yoursilverlining: omlette (and frittata, @looch !!) sounds awesome, but our kids each eat 2 scrambled eggs for breakfast every day! Maybe they can have the mac n cheese and I can make a frittata for me... mmm... I didn't get any eggs this morning... Poor Wagon Sr. scrambles 4 eggs with milk and neither of us gets any.

@mediagirl: nope, I don't get home til 5:30... at which moment LMW walks over to her high chair immediately after taking off coat and shoes and starts screeching for her dinner!!! gahhhh

@mrs. wagon: you have time (if you're at home right now?) to do this before dinner. Let it rise for an hour. My suggestion is to preheat the oven and the pizza stone (or pan) and set the bowl on top of the stove. Not sure if yours does this but my stovetop gets hot when I turn on the oven. That will help the dough rise faster. A colder area = slower rise time.

@mrs. wagon: oh a frittata!

I'd shred the zucchini into a frying pan that can go in the oven. Saute in butter or olive oil.
Beat some eggs with salt and pepper, add some milk or water to thin it a bit. Pour eggs over the zucchini, nestle in some of the mozzarella balls, that you've cut in half. Maybe sprinkle with some of the chives.
Let it cook, don't touch it for a few minutes, until the edges set. Then put the whole thing in the oven and let it cook until it puffs up and is set.
