@T-Mom: He ate some.. but I think he liked plain rice more lol (I gave him some rice too and he ate it all). I guess he's *ok* with it because at least he didn't throw them on the floor :D

@tysonja: thanks for your suggestion! This is what happened yesterday! It took less than 30 minutes to make. I baked a small potato (ahead of time), steamed broccoli (ahead of time), and my leftover cooked salmon to make the cakes.

Pardon the ugly presentation .... I'll make it better next time. haha!

Chicken with some kind of spice/flavor, broccoli, and some kind of grain. Done! This is a common meal for my house.

@irene: ah ok. You could try onigiri with mixed in ingredients with the rice if you want to get some more nutrients into rice. http://justbento.com/handbook/bento-basics/onigiri-on-parade-guide-onigiri-omusubi-rice-ball-shapes-types-and-fun

I can't give you many tips on that, the ones I made before for LOs fell apart, I think it wasn't sticky enough. Sorry!

@T-Mom: I thought about this (yes rice cooking right now lol) - but i've tried fried rice before but he's not too thrilled with it. It's not "together" and "sticky" enough and he cant really pick them up to eat because it is too shattered. He likes white rice but that has no nutrients...

Is your rice cooked? If so, you could do a quick fried rice with your salmon leftovers and frozen veggies?

my first thought was fritters! kids usually love them, and assuming you have eggs in your fridge too, you have lots of ingredients to turn into fritters. maybe like:

broccoli and cheese fritters
salmon + rice fritters
etc? :)

here are 2 recipes to get an idea... basically mix up crumbled meat/veg/cheese with an egg mixture and fry into little cakes :)

http://smittenkitchen.com/blog/2012/06/broccoli-parmesan-fritters/

http://smittenkitchen.com/blog/2011/08/zucchini-fritters/

I am running out of ideas! I've got 3 go-to recipes that I can make really fast for LO but he's been eating the same things over and over.

I have leftover quesadillas that i made yesterday but i want to make something else on top of that (so I can pack his lunch for tomorrow too). My usual go to dish would be pasta with cheese sauce but I feel like he's been eating that all the time lately.

Do you have good recipes that can be done within 15-30 minutes, that I can potentially make for him this afternoon before picking him up from daycare? (LO is 14 months)

Here's what I have in stock:
rice
pasta
spinach (some)
broccoli and carrots
chicken (still frozen right now)
cheese, milk, butter,
garlic
black beans
frozen sweet peas
frozen peas, carrots and corn
some leftover salmon (cooked)
some leftover green string beans (cooked)
ETA: Eggs :)
Ketchup
Bread
Pita bread
