<description>&#60;p&#62;@youboots:  I freeze chicken in bulk. I did a lot of research on how to prevent freezer burn.  I saran wrapped each piece, squeezing out as much air as possible, and then wrapped the pieces in aluminum foil. I don't know if it's possible to do that with chunks of bacon but might be worth a try.

<description>&#60;p&#62;My mom gives bulk bacon for Christmas. It's in 1lb increments in freezer bags and we keep it up to a year just fine in the freezer. Freezer burn usually happens when ice forms in moist food and well, theirs no water in bacon. It's already rather preserved by being bacon.&#60;/p&#62;
&#60;p&#62;DH made this tonight but used bacon since we have so much on hand. It was really good! <description>&#60;p&#62;I read a great idea to roll up individual pieces and freeze them rolled on a cookie tray, then store all the rolled frozen pieces in a ziplock. Takes up less space and you can use as many as you need. &#60;/p&#62;
&#60;p&#62;I agree with the person who suggested cooking some, crumbling it, and freezing bacon bits.

<description>&#60;p&#62;@youboots:  You might be surprised how often you'd use a vacuum sealer.  We have one and my DH uses it probably once per week.&#60;/p&#62;
&#60;p&#62;He'll grill on the weekends and we vacuum pack for reheating later.  We buy cheese in bulk, vacuum seal it up and use as needed.  We tend to buy our meat in bulk as it's cheaper, break it down and vacuum seal.

<description>&#60;p&#62;I would cook as much bacon in batches as I could on cookie sheets and freeze them already cooked.  You can just layer them on sheets of paper towel, roll them up, and put in ziploc freezer bags.  That way, you can pull out a few slices, microwave to crisp/reheat, and be on your way.  You also reduce the bulk of the bacon (i.e. the grease) but save the grease!  It makes the best eggs!&#60;/p&#62;
&#60;p&#62;I would also semi-freeze some of the bacon until its firm and easier to cut, and then chop it up into smaller pieces for something like spaghetti carbonara or bacon sauteed veggies.  I hate having hard chunk of bacon to have to try and chop up later.  &#60;/p&#62;
&#60;p&#62;I would try to keep some of the bacon in 1-2lbs packages, double or triple wrapped in plastic wrap, then put into gallon ziploc freezer bags with all the air sucked out to keep against freezer burn.  I think packing all of it in 6 slice portions you are risking a lot of freezer burn.

<description>&#60;p&#62;I semi accidentally procured myself 30 lbs of bulk fresh bacon. It's in 2 15 lb boxes. I don't have a food storage thing that I can suck the air out to properly store it. I'm just putting six slices in a ziplock bag and sqeezing the air out the best I can. But I figure that will last for about six week frozen, does that sound right?&#60;/p&#62;
&#60;p&#62; I'm planning on making a huge batch of bacon wrapped meatballs for Christmas Eve. And obviously eating a bunch in the next month and giving some away. Please share your favorite bacon recipes extra points if it can be made in bulk and frozen.
