My ham actually had a bone so I cut that out and let it simmer while I was doing prep. Then added a quart of pork stock I had made previously and frozen. I used celery, carrots, onions, garlic. I had no beans actually so I added one white and one sweet potato and some leftover Kale. Some fresh thyme and just a pinch of garlic salt &#38;amp;  pepper. It came out delicious, fragrant and hearty! &#60;/p&#62;

<description>&#60;p&#62;@locavore_mama: This is probably what I would make (which is really close to the recipe I used on Sunday. I also added mushrooms and cabbage):&#60;br /&#62;
I would saute carrots, celery, and onions, maybe some garlic, in a soup pot with olive oil for 5ish minutes.&#60;br /&#62;
Add the ham, maybe some spinach or spring mix, and some herb/spices for another 3 minutes to heat the ham, wilt the spinach, and make the spices aromatic. I use Herbes de Provence a lot, or rosemary, thyme, or oregano would be good too.&#60;br /&#62;
Then I would add beans (one can), a carton of chicken broth (maybe 4 cups) and any dried pasta you have. I did not pre-cook the orzo and the soup was definately more of a stew, but it didn't soak up too much of the broth. I simmered the soup for 15 minutes and added salt and pepper to taste.&#60;/p&#62;

&#60;p&#62;I think I'm going to do soup and quiche for tonight. That way I can freeze the extra quiche for breakfasts! And if there's enough ham I'll do fried rice tomorrow since I'll be flying solo again and will likely be late due to work.&#60;/p&#62;

&#60;p&#62;@TemperanceBrennan: how long do you simmer it for given that the ham is already cooked. And do you pre-cook the orzo a bit separately before putting into the soup since it soaks up so much liquid. I actually have a bunch of pork stock in the freezer I can use too! LOL
