That's why I won't buy a piece of a cow, unless I was getting all beef tenderloin and T-bones, much of it isn't edible in a way I can prepare it.

One thing you can do though, is pound them nice and flat, and fill them with something. Then roll them up, secure with either string or toothpicks and then simmer in a sauce. That should also make them easier to chew.

Do you have any dogs? I'd hate to waste the meat by tossing it after boiling for stock. Even though feeding it to an animal might be more wasteful than these recipes :)

@swurlygurl: as long as up cut thin it should be fine. We use pioneer woman's recipe and I think it marinates for an hour?

@swurlygirl, at the least you could probably make broth in your crockpot! So that if the meat is tough, then, well, you have broth!

@swurlygurl: yep! I'd probably toss after boiling since the meat's tough to chew!

I do the recipe you use and it's good. Try pounding them down more with a meat tenderizer. :)

@blackbird: No - everything I read online seems to say the faster you cook it, the less tough it will be, so I've been afraid of cooking it all day :( But the crockpot has given me some really tender beef and pork before - so thanks, I will add that to my list!

@MrsH: YUM! Is it the right cut? I suppose if I cut the strips small enough it might even be tolerable to chew... haha! That's probably something that needs to marinate for awhile?

@chopsuey: Does that just yield delicious stock and I would toss the beef once it's done... boiling? (obviously I've never made it before)

We buy 1/4 of a cow every year with DH's parents. I generally love it, except I get a ton of these 'Minute Steaks' that I have no idea what to do with. I think they might also be called cube steaks? They're medium-thin, and SOOO chewy.
It seems online the big consensus is to bread and flour, then pan fry. Tried that - needed jaws of life to chew through it.
Any other ideas or tips? :/
