<description>&#60;p&#62;Things that can be prepped in advance:&#60;/p&#62;
&#60;p&#62;- Grilled corn:  grill it in the husk and it is awesome.  We rub it with butter and creole seasoning and grill for about 20 minutes, turning constantly.&#60;/p&#62;
&#60;p&#62;- Sweet potato rounds: peel sweet potatoes, cut into 1&#34; rounds, brush with olive oil, salt &#38;amp; pepper, and bake at 350 degrees for about 20 minutes, or until they pierce easily with a fork. We sometimes add cinnamon.

I'm trying to think of a couple side dishes that feel kinda &#34;summery&#34; but still go with the pork... any ideas?? Bonus points if I can prepare some or all of it in advance!
