&#60;p&#62;Also, consider doing pinwheels instead of sandwiches.  They hold up WAY longer than regular bread so you can make them ahead of time and keep them in the fridge to cut down on prep time the day of.

Strawberry jam &#38;amp; PB&#60;br /&#62;
Lox, dill, cream cheese&#60;br /&#62;
Hummus  &#38;amp; cucumber &#60;/p&#62;
&#60;p&#62;Sometimes just being creative with the  presentation is all the variety you really need.  You can get 4 squares, 4 triangles, 3 rectangles out of a slice. Interchanging white and wheat in your display for the sandwich type could be interesting visually too.
