She'll eat any vegetable as long as it's in a pouch with fruit. I don't even care if she eats pouches until she's 12 as long as she's getting her veggies. :)

My kid will eat roasted cubed sweet potatoes on occasion but I can not get her to eat anything else at home. She doesn't like red pasta sauce so I can't sneak them in that. So she gets veggies in a pouch.

At day care she will eat blanched baby carrots for a snack.

@beachbee: http://joythebaker.com/2012/10/broccoli-potato-nuggets/
These can be time-consuming. I usually skip the roasting and just boil the veggies in a little water until they are almost done. We love these!

This is also a big hit in my house: http://www.skinnytaste.com/2013/11/cauliflower-tots.html

J is just NOT a fan of veggies. He eats everything else, but most veggies are a no-go. We have luck with roasted carrots chopped into chunks, cherry tomatoes cut up, these spinach quinoa cakes from Costco (like crab cakes), and that's pretty much it. I had high hopes for broccoli cheese casserole last night, but he was so grossed out he shuddered!! Oh well, I hated veggies as a toddler/kid but grew out of it.

Will he eat dips or spreads? My son liked pouches too, and homemade, veggie-laden bean dip was a good transition. Veggies go nicely into hummus or other bean dips, as well as cheese/sour cream-based dips. Also, if cheese is okay, I found that some melted cheddar helped to make vegetables more appetizing. And soy sauce/liquid aminos might be worth a try, too. Finely minced veggies in grilled cheese might work.

We have had pretty good luck in the food department, but we had a brief-ish phase of only bananas, bread, avocados, and yogurt. I kept offering all the other stuff and he eventually came around.

Avocados, cucumbers, red onions, sweet potatoes, and frozen peas - by themselves.

Spinach, zucchini, tomatoes, and bell peppers - in her scrambled eggs.

Green beans, butternut squash, carrots - in curry sauce over quinoa.

I also had luck making "spaghetti" out of zucchini and serving it in pasta sauce.

Try kale chips too!

I would keep trying pees because they are such a kid favorite! We either steam on the stove or microwave for the most part...frozen veggies and LO is a very good veggie eater as long as they are soft enough. Peas, broccoli, green beans, etc. Maybe add some butter for taste?

We had some success with Trader joes kale and spinach dip (in Greek yogurt). He liked dunking tortilla chips. We also do lots of pouches.

I always stick spinach or kale in my homemade chicken nuggets (I make a big batch just for her and have them in the freezer so we can pull out a few at a time). I also make these veggie/potato nuggets that we all like with carrots, broccoli, and white potatoes.

Sweet potato pancakes are also a hit.

My LO doesn't like mashed potatoes or soup either.

LO is 13 months and will only eat things cut into teeny tiny squares at the moment. I do A LOT of chopping. That's okay, whatever works! She loves carrots, sweet potatoes, avocado, green beans, zucchini and cucs, in teeny squares. I put kale, spinach, collards, avo, broccoli, cauliflower in her smoothie. I am always trying to think of more veggies that she'd like and chopping new ones regularly... ongoing process!

LO would survive off of bread and crackers and blueberries if we let him. But I'm trying to get serious about his vegetable intake. He won't eat them straight up, so I'm trying to find other ways. Here is what we have so far:

Carrots - muffins, in veggie pancakes (2c grated zucchini and carrots, one egg, quarter cup milk, quarter cup flour, some baking soda), smoothies
Spinach - smoothies
Cucumber - in a watermelon, cucumber juice popsicle
Tomatoes - salsa, spaghetti sauce
Zucchini - veggie pancakes
Sweet potato - mixed with applesauce

And he will eat anything in a pouch.

Things that have been a no go, so far: frozen peas, steamed anything, corn off the cob, sweet potato fritters, creamed spinach, mashed sweet potatoes, soup.

Any new ideas?
