<description>&#60;p&#62;In the winter we roast the following a lot: potatoes, parsnips, turnips, asparagus, onions, yams, winter squash.&#60;/p&#62;
&#60;p&#62;In summer, we grill a lot. Usually: summer squash varieties, eggplant, asparagus, green beans, fennel (OMG soooooooo good!!), corn, sweet peppers, onions, mushrooms, hot peppers. Love chard and kale.&#60;/p&#62;
&#60;p&#62;Our salads (which we have almost every day) are not lettuce salads, they are a mix of 10+ different greens (stuff like mustard greens, baby bok choy, spinach, kale, chard, and other “greens”). Also love spinach salad. Sometimes we eat lettuce too, but not too often – usually romaine. &#60;/p&#62;
&#60;p&#62;We eat a ton of avocado, but I’m not sure if they are a veggie or not! We also try to avoid using butter, and use olive oil instead.

<description>&#60;p&#62;Mushrooms, onions, peas, broccolli, brussels sprouts, yams, potatoes, carrots, and tomatoes are always on hand in our house. Depending on what others are in the house I roast (usually the root vegetables) with olive oil and herbs (we usually have fresh basil, oregano, thyme, rosemary and chives on hand).&#60;/p&#62;
&#60;p&#62;DH loves asparagus and bell peppers, but the smell of asparagus makes me nauseated, and I can't tolerate peppers, so if we cook them with whatever else we are eating I just pick them out.&#60;/p&#62;
&#60;p&#62;Otherwise most are good steamed with butter and sea salt, or sauteed with olive oil or butter. &#60;/p&#62;
&#60;p&#62;We are just harvesting from our garden now, so we are making lots of our &#34;garden veggie pasta sauce&#34; which uses tomato, shallots, carrots and herbs from our garden, with mushrooms, zucchini, and sometimes ground beef. The sauce is kind of an all-day affair though (we start by oven roasting our tomatoes with garlic, shallots and herbs with olive oil for several hours at low heat).

<description>&#60;p&#62;I cook a ton a veggies since my hubs is a pescaterian and we regularly eat vegetarian. I regularly cook: aubergine (eggplant), courgette (zucchini), peppers, sweet potatoes, potatoes, Brussels sprouts, cauliflower, green beans, peas, sugar snap peas, mange tout, onions, spinach, mushrooms, and baby corn. (That's all I can think of right now.&#60;br /&#62;
The easiest way to cook most of them is to roast them. Drizzle with olive oil or coconut oil, add some garlic, and pop them in the oven for awhile. Easy and delicious!&#60;br /&#62;
I made some cauliflower fritters the other night that were so yummy. Steam the cauliflower for 4 mins, coat in flour, dip in a tempura batter and fry. Drizzle with capers and lemon juice.

<description>&#60;p&#62;Zucchini (roasted, or julienned and sauteed to replace pasta noodles), asparagus (steamed or roated), broccoli, bell peppers (roasted) onions (roasted or cooked into things) protabello mushrooms (roasted or cooked into things) green beans, corn on the cob, sliced raw tomatoes. Whenever we are roasting veggies, I just toss them in a ziploc bag with some sort of salad dressing or oil/vingear/spice blend to marinate them for a while. Always a hit!

<description>&#60;p&#62;I love to roast vegetables.  Olive oil, salt and pepper is my go to seasoning.  Brussel spouts are fantastic this way.  Cut off the little stem, quarter, and then roast up.  The leaves that fall off get nice and crispy and have a really good taste to them.  Just make sure you roast until the veggies start to brown, that's when the best flavor comes out.  Our other favorites to roast are asparagus, zucchini/summer squash, onions, and peppers.  &#60;/p&#62;
&#60;p&#62;Spinach I like to cook in a pan with butter and garlic.  It wilts quickly and is delish.&#60;/p&#62;
&#60;p&#62;Also, I love spaghetti squash. You cut it in half, bake in the oven for 40 minutes or so, shred the inside with a fork and then either eat like that, or you can make a &#34;casserole&#34; with it.  Saute up some mushrooms, tiny diced onions, some garlic, and some drained diced tomatoes then mix with the squash, add some grated parmesan cheese, and then bake in the oven another 15-20 minutes.  It's very yummy!

<description>&#60;p&#62;@BoogieBea:  Taiwanese cabbage is different from napa cabbage (which I like too!) the leaves are firmer and a bit sweeter, and the cabbage itself looks short and squat. You should google it and look for it at the Asian grocers! I actually find it at the Mexican grocers.

&#60;p&#62;I put spinach in pretty much everything I can but usually only serve it on it's own in a salad...spinach, dried cranberries or fresh strawberries, crumbled bleu, feta or gorgonzola cheese, walnuts and a balsamic honey vinaigrette.&#60;/p&#62;
&#60;p&#62;Squash and zucchini...usually just sliced and sauteed on the stove with garlic and a few other spices. In the fall and winter I go nuts making huge pots of butternut squash soup.

Broccoli, spinach, asparagus, squash, zucchini, green beans, baby bok choy, Chinese broccoli, kale, Chinese eggplant  etc.&#60;br /&#62;
Asparagus is really yummy on the grill wIth balsamic vinaigrette.&#60;br /&#62;
We grill veggies or do a quickly savory or Chinese stir fry. I only roast veggies in cooler weather otherwise the house gets too hit!&#60;/p&#62;
&#60;p&#62;I'm hoping M will eat everything because my husband and I pretty much do!

<description>&#60;p&#62;Right now we are just feeding me and my DH, so I don't know how this would go over with kids, but we love leeks roasted with a little olive oil and salt.  Generally, we are a big fan of roasting veggies.  Yams/sweet potatoes are also great since they are sweeter than other veggies.  I also love cauliflower and brussel sprouts.  They are awesome roasted, steamed or boiled - depending on what texture you prefer - and served with melted butter and a little salt and pepper.

He used to eat broccoli and spinach on a regular basis but now he'll eat broccoli depending on his mood and no spinach at all. I can get him to eat kale when I make baked kale chips. He'll eat cauliflower from this one favorite restaurant of his but it's unfortunately deep fried. I've made the baked version of it and he'll eat it sometimes. Meanwhile, my daughter will eat any veggie I give her, but she's still the one who suffers from constipation.&#60;/p&#62;
&#60;p&#62;@sweetchic:  Is that the same as napa cabbage? Love napa cabbage in noodle soup, makes the soup base so tasty.

&#60;p&#62;I make a big veggie stir fry at least once a week; bell peppers, zucchini, onion, mushrooms, carrots, chard and beans. More/less depending on sales and what looks good. I serve it over sauteed cabbage so that I have a full veggie meal. I like to make a &#34;sauce&#34; with toasted sesame oil, red wine vinegar, amino acids, garlic, ginger and a little wine.&#60;/p&#62;
&#60;p&#62;I use kale or spinach everyday in my green smoothies.&#60;/p&#62;
&#60;p&#62;I cook a lot of broccoli as well, butter salt and pepper.&#60;/p&#62;
&#60;p&#62;I've started cooking a lot of artichokes too - I saute them with butter or grapeseed oil, put some salt, pepper and parmesan on them.&#60;/p&#62;
&#60;p&#62;I love corn on the cob too and have been getting some from the farmers market, I just boil it, lather on some butter and shake on some salt. Yum.

&#60;p&#62;I also make lots of things with eggplant. I use it instead of pasta in lasagna. I make eggplant parm and rollatinis with goat cheese and pesto on the inside. Our guy likes this too.&#60;/p&#62;
&#60;p&#62;I also hide spinach in things. I put it into the food processor with cheese and then put it into grilled cheese. It's fun because it's green :)
