Oh! Another thing I've made is baked pierogies - like I use frozen potato and onion pierogies instead of ravioli and bake it in marinara and whatever add ins you like. DH can't eat cheese so it ends up being vegan, but I usually serve it to him with a salad and a link or two of Italian sausage.

Before reading your post and knowing about the vegans, I thought meatballs and Brussels sprouts with bacon. You could do the Brussels sprouts without bacon. I've also done stuffed mushrooms (probably not good without cheese) and a pomegranate salad if you want something vegan. Roasted potatoes with peppers and onion?

I have had to do something similar (but in reverse) for my husband who has some odd dietary restrictions that no one in his family caters to. I usually make a large chicken and rice casserole with veggies in it as a kind of one pot meal. With a salad on the side and some fruit salad that's plenty. You can make it Christmasy by putting in chopped spinach and roasted red pepper so it looks festive. It's a basic rice, chopped rotisserie chicken breast and cream of something recipe you can find anywhere except I make my own cream of base for DH. I make a large pan because the rest of the family ends up eating it. I end up bringing our own salad mix and dressing and usually add in a dessert to seem friendly to everyone.

@ShootingStar: I understand. What about au gratin potatoes and a small ham? I'm assuming they'll have some vegan salads or other vegetable sides so that would round it out into a meal. If you want a dessert to bridge the gap you could do a fruit pie with a crust with shortening instead of butter and whipped cream for the non vegans.

@MrsSRS: I kind of don't care if they are. That probably sounds terrible, but I have kind of a rocky past with them and the vegan demands, and I've decided I'm no longer concerned with whether they'll be offended or not.

Will they be offended if you bring beef? I have a good recipe for a stroganoff type stew over egg noodles.

@sapphire: No category :-/. Since I think whatever we bring will all we'll want to eat, it should probably be some sort of main dish, and possibly a side as well.

Oh, and it needs to be a pretty good amount of food, since I'm thinking FIL (who also doesn't like vegan food) will probably want to eat it too. And MIL and BIL will possibly eat some too.

The only thing I can think of is baked ziti, but that doesn't seem very festive.

Were you given a category of what to bring? Or have a preference to category? That will help to start narrowing it down.

Christmas dinner this year is at MIL's house and it's potluck. I'm kind of assuming that whatever I bring will be the only thing(s) that DH and I will like. SIL is vegan and I think MIL and BIL may stick to vegan foods (which we are not fans of).

So anyways, I have no idea what to bring. Anyone have any ideas??
