<description>&#60;p&#62;I use a Cuisinart Green Gourmet pan (nonstick but not Teflon) and heat it first.  Then I either add egg directly (if making fried egg) or mix he eggs up in a cup with some milk(milk optional) and then add (for omelets or scrambled eggs).  No oil, butter, or cooking spray and it comes out great.  Actually I think cooking spray has potential to destroy the nonstick cooking surface.

<description>&#60;p&#62;@mrbee:  Totally agree with you there! But a tsp will only set you back about 30-40 calories. Honestly, olive oil has a low smoke point--it's considered a &#34;medium heat oil&#34; so it's not the best to fry in.&#60;/p&#62;
&#60;p&#62;When i'm watching my macros, i'll mix whole eggs with egg whites, too, to get more protein without adding a lot more fat (so i can allocate that fat elsewhere...i try to stay within 20-30% for the day). Or stir cottage cheese into my eggs....

<description>&#60;p&#62;@Mr. Bee: I've been given them to DH some days, and toss them on others.  To tell you the truth, I've only switched to egg whites the last couple of months, because the egg yolk didn't smell good to my pregnant nose. &#60;/p&#62;
&#60;p&#62;@Shortcake: I didn't mean to imply that egg yolks weren't healthy, only that they were higher in cholesterol, which I assumed Mr. Bee was trying to avoid by cutting back on oils.  Yolks contain lots of minerals and omega 3s, something I don't think you get from the whites. I'll be eating them again, once they taste good to me!

&#60;p&#62;Mr. Bee: I've been having scrambled egg whites a lot latley, with just a minimal amount of butter.  Without the yolks they are healthier and don't seem to require the same amount of lubricant (whatever you end up using) for the pan.

The key is to let the pan get hot enough before putting the egg in, and then let it cook for the perfect amount of time before flipping (if you flip). We're still working on that *perfect* amount of time, but about 75% of the time we finish with a clean pan :)
