<description>&#60;p&#62;I love making those paleo egg muffins (basically mini frittatas). I usually do sausage (whatever's on sale, or no sausage if nothing's on sale), greens (kale, spinach, or chard), and beaten eggs. Sometimes I'll add cherry tomatoes and cheese. I usually sauté the veg, add 10-12 eggs and bake it in a Pyrex, then cut it into individual portions and freeze.&#60;/p&#62;
&#60;p&#62;ETA: my husband loves shakshuka, but it gives me heartburn!

<description>&#60;p&#62;I either eat a tofu and fruit smoothie, steel cut oats with fruit, apple with almond butter or a mini bagel with cream cheese.  If I am buying from the cafeteria, I have egg whites with vegetables or a peanut butter sandwich on wheat.&#60;/p&#62;
