<description>&#60;p&#62;@YogiRunner:  I don’t follow any recipe and use what I have on hand mostly to make them (which makes them really versitile), but the basic gist is to take leftover salmon (or you can use canned cooked salmon), chunk/”shred” it with a fork and add herbs, something to bind it (bit of mayo if desired or lemon juice, an egg) and then a couple of the following: onion family (any type of onion, scallions, chives, shallots), garlic, minced peppers, capers, etc.&#60;/p&#62;
&#60;p&#62;Combine, shape into patties and dredge in panko (or flour and cornmeal), and then either fry until brown on each side or bake until browned on each side (takes about 7 minutes per side to fry up).&#60;/p&#62;
&#60;p&#62;Last night’s were the leftover sockeye, shallots, red/yellow pepper, dill, garlic, lemon juice and an egg and dredged in flour and cornmeal because I was out of panko. &#60;/p&#62;
&#60;p&#62;I also made a “cheaters” garlic/dill aioli – just sour cream with lemon juice, dill and garlic mixed in.

&#60;p&#62;Burritos with ground turkey, black beans, salsa, avocado and cilantro.&#60;/p&#62;
&#60;p&#62;Then I think I'll make tortilla pizzas with BBQ sauce, chicken breast and cilantro.

<description>&#60;p&#62;I do want to eat more fish and it usually is so quick. @mediagirl:  is it breaded or cooked, or just plain Frozen? Do you thaw before cooking? That's a good idea to have on hand. I usually buy chicken breasts in the vacuum packs to have in the freezer but I haven't been to Costco in forever. &#60;/p&#62;
&#60;p&#62;@Canoli:  I wouldn't mind the cooking so much if someone else would plan the meal and deliver the ingredients, and then take care of my children while I do the cooking, then clean up afterwards. Is that really too much to ask??

<description>&#60;p&#62;Get a big box of tilapia or cod from Costco. It's always flavorful and we love it. We eat it as fish tacos or just on its own. Toss it in the oven for 20 minutes or so, throw together a steamed veggie and pre-cook a starch for the week (rice, noodles, etc).
