We went to a food event for the March of Dimes. It was a farmer and chef collaboration featuring a lot of local restaurants and nearby farms. I was stuffed beyond belief. I thought I paced myself but couldn't even eat all the food offered.

@locavore_mama: You totally could do that size but I prefer more of the oven-roasted outside than the potatoe-y inside so I make the pieces smaller to get more surface area. (I'm probably not making any sense here, lol) I guess the word "wedges" does make me think of bigger pieces, but I'm not sure what else to call em!

ETA: Not sure about the time difference between yams and regular potatoes. DH hates yams so I don't get to make them too often.

@MapleMoose: ah OK. I'm imagining like steak fries sizes!

@grizz: It's really easy, at least the way DH makes it on his night to cook. He gets the pre-made crab meat stuffing near the seafood section and throws it on the fish with lemon juice. The baking time/temp can vary, which makes it easy to cook with other things like the seasoned potatoes. We'll probably do 375 F for 20 minutes covered in foil, then another 10 minutes uncovered. I've made the stuffing from scratch before using canned or frozen crabmeat, ritz crackers, cheese, etc but honestly this way is easier and tastes just as good to us.

@locavore_mama: I've noticed that the baking time depends on the oven. Our old apartment oven took foreverrr but our new oven in our house cooks the potatoes quicker, probably about 40 minutes at 375 F. I cut the pieces all the same size and on the smaller side so they are bite-size.
