We usually cook 3-4 dinners on Sunday and eat that during the week along with one crock pot meal. We like to do fun stuff in the evenings, especially this time of year!

I usually plan a crockpot meal for those nights, but if I'm unprepared or it's a last minute event then I pick up a rotisserie chicken and some pasta salad and add some fruit and call it good!

Quesadillas are a staple in our house and I always have frozen taquitos and tortellini in the freezer for a quick meal.

@regberadaisy: Same. Once a week we make a meal which we know will produce leftovers. And on a hectic night we just warm them up!

I try to plan for leftovers those nights or something super fast. I have been known to give LO a cheese stick, some ham, a Go Go Squeezy and some fruit and she is happy. Then we have extra time to hunt down dinner for us.

I have all kinds of go-to quick meals that can be ready in 10-15 minutes. Broiled salmon and TJs frozen potatoes, mushrooms, and greenbeans mix (it is so good!), Rotisserie chicken and broccoli, bought meatballs and pasta with jarred sauce, sometimes we buy beef brisket already cooked from the store and eat it on sandwiches with avocado and tomato. Fish sticks for LO sometimes, or eggs with spinach or broccoli mixed in.

Honestly, most of my "cooking" is more like meal preparing and I spend 10-20 minutes each night only.

A friend of mine orders pizza to be delivered to the pool after work so her kids can go straight from day care to the pool. If it were me, I would do something similar and get Subway and eat it there...

I do crockpot meals twice a week that make enough to feed us for four nights. Easiest one in the world is to stick a package of chicken breasts in with a bottle of zesty italian dressing, cook on low for 8 hours, shred when you get home and serve over brown minute rice or quinoa with some frozen veggies/salad and fruit.

I usually make a couple meals on weekends, like soup or a casserole that just need to be reheated. Now that it's summer, I'll prep a bunch of salad ingredients (grilled chicken chopped veggies), so all we have to do is throw it in a bowl after work. And frozen pizza saves the day some nights!

We usually just grill, it takes about 20 minutes or less - steaks, hot dogs, hamburgers, marinated chicken, etc. We throw corn on the grill too (wrapped in foil) for a side. Usually pretty quick and easy and little cleanup.

We don't really go out much on work nights though. But we will go for a walk or go play in the yard.

Background: DH and I both work out of the house - DH gets home around 4:30, I get home around 5:30 with DD in tow. Bedtime is 7pm.

We have a couple of staples that are basically ready super quick: crock pot meals, DH BBQ and store bought.

Most of my crock pot meals are ready to go when we get home - some require DH to do something 30 mins prior to serving. DH BBQs too - so he'll have the stuff ready when we get home. And lastly, Store Bought - usually a rotisserie chicken, bag of pre-chopped broccoli and simply potatoes mashed potatoes - totally easy in a pinch.

I also started making a casserole (or equivalent) every sunday so there is always "left overs" in the fridge. This is especially helpful when DD completely rejects what DH and I are eating.

We have done the splash pad after work two nights in a row this week, they are DH's only early nights. We did take out both times. We try to stick with healthy options (grilled Chick Fil A nuggets) and also bring along some fresh fruit and water. Last night we picked up the food and did a picnic at the splash pad and the kids were in heaven. Otherwise I have several Earth's best frozen meatballs/chicken nuggets in the freezer if I am short on time after work.

We have a similar situation, my husband and I tend to eat a hot lunch so we're fine with a smaller, cold dinner. Sandwiches, salads made with leftover grilled meats, take out, order in a pizza, etc.

I tried to begin a love affair with my crockpot, but it just didn't work out.

One of the hardest parts of balancing the work/family balance for me is figuring out after-work things to do. Even with a later bedtime, it is difficult to give our daughter play time after work. I get home at 5:30. Bedtime is between 7:30 and 8.

If we want to do anything fun after work (like go to the pool) it's hard to figure out what to have for dinner.

So, what do you do for dinner when you take your child out to play after work? Do you do take-out? Prep something in advance? Have a cold meal? Help me.
