i'm usually the opposite. i have trouble coming up with a dinner menu but lunch is usually easy for me = leftovers! today, i'll be having some chicken jook = aka congee aka porridge? if i have zero leftovers, i'll go grab some pizza or panera bread or white castle. i do have some canned soups as my ultimate desperate last resort.

I eat leftovers half the time and he other have I make a sun dried tomato turkey sandwich on toasted wheat bread. I add cheese, lettuce, tomatoes, pickles, and ranch dressing.

Today I'm going to eat something lite because in a few hours my husband and I are going to a Cajun restaurant/bar for awesome food, beer, and the BCS National Championship game.

Usually leftovers, but today it was chicken nuggets and tater tots haha. I'm a preschool teacher, so I ate what they had today because I forgot to bring my lunch. I know, so healthy...

Today is just rice + seaweed... and tons of fruit.

Usually we do leftovers from the wknd (though, I'm not a huge fan of leftovers). We always have a few healthy choices in stock... or my usual go to is soup + salad from the coney island across the street or downstairs in our building cafeteria.

Apparently nothing today, considering I left my lunch on the kitchen counter. Sweet.

I usually make just enough dinner to have leftovers for myself and my husband. Which usually consists of a bunch o' veggies and a protien. I've been really lame in the creativity department with cooking. I'm just so tired! I always have whole wheat tortillas in the house so I just throw a bunch of stuff in them, wrap it up and go on my way.

Usually I'll cook up frozen veggies and eat them. Quick and relatively healthy (I add butter). DH's traveling so I keep it simple.
