Here is the link to the chicken with peanut sauce recipe. Most of the time I just use some simple grilled chicken, but the marinade on the recipe is very tasty. Sometimes I make double the sauce, it keeps well in the fridge for lunch/leftovers.&#60;br /&#62;

&#60;p&#62;This week has been pretty ad hoc. Sunday I planned to do a full English breakfast but we had friends over who stayed later than I expected so we ended up just doing baked beans and scrambled eggs. Then Monday I planned to do Panko/parmesan breaded chicken tenders but I remembered that we had soccer at 6:30 so had to scramble and so something quick, so the boys ate leftover pasta and my husband and I just did the &#34;stand in front of the fridge and stuff things in your face for a while&#34; thing. Last night we did the chicken tenders, tonight we're doing rice bowls (sauteed spinach with garlic, avocado, tomato, shredded cheese, a fried egg, and sriracha over rice), and tomorrow after work we're heading up to the cottage so we'll eat on the road. I'm hoping to be more organized next week!

Squash soup ( using leftover chicken soup and blending in squash), ground beef- either bun less burger or in a bowl with veggies&#60;br /&#62;
Lentils cooked in broth with veg, serve with butter/yogurt&#60;br /&#62;
Pan fried fish, frozen veg, salad&#60;br /&#62;
Whole roasted chicken with roasted veg&#60;br /&#62;
Sausage with peppers and onions&#60;br /&#62;
Lentil pasta and tomato sauce with leftover beef mixed in&#60;/p&#62;
&#60;p&#62;May exchange a meal or two depending on what I find in the store. :)

<description>&#60;p&#62;@Chuckles:  Most of mine are half-prepped in bulk so technically it’s always leftovers! I grill a big batch of chicken cutlets and freeze so we just pull out and prep a few how we need it, the chili was a big batch and frozen, tortellini is from a frozen bag, etc. Then, we use leftovers from the evening for lunches. But yeah I am all about the leftover/meal prep so I can spend as little time as possible cooking each night.

<description>&#60;p&#62;I only cook every other day, and we eat leftovers or a twist on the meal again the second night. Here's the plan for this week:&#60;/p&#62;
&#60;p&#62;M/T: Black bean/rice bowls, with roasted sweet potato, cauliflower, corn, toppings (cheese, salsa, guacamole). I also made jicama fries last night because we got a TON of jicama in our veggie delivery box...&#60;/p&#62;
&#60;p&#62;W/Th: Stir fry, tonight with rice, tomorrow night with noodles - somehow that makes my husband think it's different...ha! We'll also have carrot sticks, celery sticks, and red pepper slices for the kids to dip in a peanut sauce. And they'll probably get chicken nuggets with dinner at least one of the nights, since they're hit or miss on eating stir fry.&#60;/p&#62;
&#60;p&#62;Friday: Appetizer dinner + desserts: cheese/crackers, tomato and feta dip, chips/guacamole, followed up with ice-cream brownie sundaes&#60;/p&#62;
&#60;p&#62;Sat/Sun: Chickpea piccata over rice, roasted cauliflower/broccoli, maybe salad with it one night

Veggie burger sliders with caprese and seared zucchini.&#60;br /&#62;
Pasta salad (this is my go-to lazy meal because it’s a box of whole wheat pasta, a jar of drained sun dried tomatoes, artichoke hearts, capers, and chopped basil). My mom likes it with ranch but I just add pepper.&#60;br /&#62;
Breakfast for dinner (I think this will be biscuits and gravy).&#60;br /&#62;
I really craving Chinese so I’m hoping to talk my husband into Chinese food sometime this week.&#60;br /&#62;
Homemade pizza and salad (pesto and Hawaiian)&#60;/p&#62;
&#60;p&#62;I made jackfruit pulled “pork” last week and it wasn’t bad. You need a sweet sauce bc the jackfruit is brined and quite tangy (I got a can at Trader Joe’s).
