I usually serve it over rice or rice noodles, but I was too tired, so we ate it with lettuce (wraps). It's quick, easy, and tasty.</p> <p>1 small onion, finely chopped<br /> 1 lb ground beef<br /> 3/4 cup white rice<br /> 1 1/2 cups water<br /> 2-3 tablespoons tomato paste (I always keep a tube in the fridge and just give it a couple good squeezes)<br /> 1 bag of fresh baby spinach or 3/4 bag of frozen spinach<br /> 1 clove garlic, minced (optional)<br /> Salt and pepper</p> <p>Sauté the onion in a bit of oil in a large skillet or sauté pan.. When it softens, add the beef and cook until its browned. If there's a lot of grease, drain it off. Add the rice, water, and tomato paste (and garlic, if using). Stir well and bring to a boil. Add spinach, cover, turn down the heat to low, and cook until the rice is tender, about 20 minutes.
