<description>&#60;p&#62;I heard a teaspoon of baking soda in the water helps...and it really does! I will never boil eggs without it again! I start the eggs in cold water with baking soda, bring to boil, then leave on low for 15 mins. When done I place them in cold water and peel right away.

<description>&#60;p&#62;I cook my eggs exactly like you do @mrbee:  and I pour out the hot water and run cold water into the pot until the eggs are cool. Then I crack the top and bottom, then I roll the egg under my palm, on its side all the way around so that the shell all kind of shatters (but it stays together because of that skin between the shell and the meat). It usually just peels right off!

@mrbee:  I put eggs in a small pot, add water til they're all covered, put on stove, I leave them in boiling water for 7ish minutes (never look at the time, just turn the stove off when I feel they're ready). If I need the eggs immediately, I'll take one out at a time with a spoon and peel under cold water. If I don't need them immediately, I take them out and put them in a bowl.

I put the eggs in cold water, boil them, then one the water is boiling I turn off the heat and let the eggs stand for a certain number of minutes (depending on how well I want them done).  Then I drain the water, and start the peeling process under cold water.  Am I missing a crucial step somewhere?
