<description>&#60;p&#62;Definitely add some water to it and don't turn the heat up too high, especially using a cast iron pan.  I always add some water to steam all veggies when I saute it.  It helps cook it faster and you can always dry out the water a little bit after you open the lid.  You can also add some salt but I find that it's too salty when I do that so I just add it in the end and very little since we are a low sodium family.

I'm thinking that's part of your problem-- electric coils are either on, or off-- so they reach a set temperature by cycling (so high is usually always on, medium might be half/half, etc.). I wouldn't rule out cast iron entirely, but you might need to use a lower heat than what the recipe states to get the desired result. You'll have to play around a little and make friends with your stovetop to figure out how to translate things like &#34;medium high heat&#34; to your particular range.
