what people have said above, plus pizza and soup!

soup if there is lots of leftovers, and pizza if it's just tiny bits :)

We always have eggs, rice, tomato products, beans, and Mexican seasonings (taco seasoning, salsa, enchilada sauce) on hand, so its always something using those things. Our clean out meals usually depend on what leftover meat we have available.

Our favorite is probably posole or tortilla soup using shredded leftover chicken. Just throw in veggies, meat, broth, and some salsa or enchilada sauce. Beans or hominy if we've got it (we always do!) Do it before bed or in the morning before work and food is ready!

If we have something more like leftover sausage, chops, or ham, we'll do jambalaya or a quick red beans and rice. 30 minutes.

If we have leftover ground beef, it will probably become a really fast skillet chili mac or stuffed pepper skillet. 30 minutes.

Saute whatever veggie (asparagus, broccoli, mushrooms, etc) and put it over quinoa with an over easy egg on top since we always have eggs and quinoa.

Calentado - basically mix it in with scrambled eggs and serve with an arepa (like a really thick corn tortilla)

What do you make when you open the fridge and only have some remnants of things (meats, cheeses, veggies, etc.) left and you don't want to go shopping or order in?

For us, we make a sort of hash. I usually take any leftover veggies and saute them up and add some spices. To this I'll add whatever meat I can find. We usually have sausage, pulled pork or chicken, bacon etc. in the freezer. Sometimes we'll add potato (sweet or regular) or eat over pasta or quinoa. If we want to get fancy, we'll throw a fried egg on top.

Or we might do something similar to the above but make a frittata or omelette.

What do you do? Looking for some other ideas so we can mix things up.
