We like to eat breakfast for dinner sometimes when we're running short on time. We'll do eggs, toast, bacon/sausage, and hash browns. Sometimes we'll even do pancakes. Yum!

Everything sounds yummy, thanks for all the ideas!

@yoursilverlining: Can't wait to make that pasta, sounds delish and I love things that I always just happen to have the ingrediants in the house already.

@Clementine: Sounds very yummy.... but buffalo meat? Is that common where you live?

instant mac and cheese with ground buffalo meat and some green veg all mixed together.

cook some ground meat (chicken, turkey, beef, we love buffalo meat) with some garlic, salt, pepper then add some type of quick cooking greens. i usually add spinach or cut up some kale or broccoli. final step is to add this to your cooked mac n cheese. One pot meal that's satisfying :)

Spaghetti olio is one of our favorite quick meals. In the time it takes the water to boil/pasta to cook, just heat up olive oil, tons of garlic and red pepper flakes in another pan. When the pasta is done – add it to the olive oil and warm through for a few minutes. That’s it – spicy and comforting spaghetti. I also make a salad for a side dish in the time the pasta is cooking.

Omelettes are really quick – we like ones with pesto with goat cheese, or “southwest” with pepper jack cheese, avocado, salsa, etc. Usually have a big salad on the side with tomatoes and goat cheese.

Like @Cyneswith, we eat a lot of fish for quick meals. Much quicker (and way tastier) to broil fresh fish than make fish sticks or other processed, frozen items.

Fish, sprinkled with lemon juice, pepper, salt, and dill (or your preferred liquid/spice combo), broiled for 8 minutes or so, served with 90 second rice and some form of veggie.

I like tuna casserole because it's pretty straightforward or tuna melts. Shrimp or chicken fajitas are also a good go to for us
