I like all the rustic, simple preparations that focus on flavor. I love pasta dishes where the pasta is good on its own, has texture and doesn’t need a ton of sauce. Bolognese, pesto, Arabbiata sauces – love them all. I also like a good ravioli or lasagna, and one of my favorite dishes at our local Italian place is “macheroni paesani” – which is a taleggio cheese sauce with taggiasche olives.
