@yoursilverlining: Thank you for giving specifics! I have zero creativity with food, I'm a stick to the recipe sort of person :-)

@Crystal: @MrsBrewer: sure, and thanks!

Sure! It’s an easy recipe to make your own, and we just use what we have.

For the salsa, Frontera brand (Rick Bayless) makes a good jarred tomatillo salsa, and some grocery stores also carry a canned one in the ethnic aisle that’s fine too. It’s also easy to make: roast tomatillos with garlic and jalapenos or Serrano peppers, then blend with cilantro, juice of 1 lime and about a cup of chicken or veggie stock. The homemade kind freezes very well, so you can make big batches at one time.

For the cabbage slaw, just shred (or dice, whatever your preference) green cabbage, carrot and onion. I usually also do a squeeze of lime juice over the top and a little bit of salt and pepper. You can make this the night before if you want and refrigerate.

Then just quickly cook up the shrimp in a little salsa, cut up an avocado and fill warm corn tortillas with the shrimp, avocado and cabbage slaw! They are very tasty and light. Usually on the side we have refried beans, and/or more of the cabbage slaw and mix some tomatoes and corn into the slaw to make it more of a side dish.

@MrsBrewer: we cook them up in a little tomatillo salsa, and then make a spicy cabbage slaw with cabbage, carrot and onion, and have that with the shrimp and avocados in warmed tortillas. So good, very quick and easy to make.

Since they're already cooked, I would just thaw them and then marinate them in the following and use as a sauce on pasta! Just ignore the "uncooked" part of the shrimp below. We would marinate in a pyrex dish and then pop it in the oven for 10 minutes to warm.

-3 cloves of minced garlic
-1/3 cup olive oil
-1/4 cup tomato sauce (more if you want to make it a bit more saucy)
-2 Tablespoons of red wine vinegar (I do more b/c I looooove red wine vinegar)
-2 Tablespoons of chopped fresh basil (If I don't have fresh, I use 1/4-1/2 tsp of dried)
-1/2 teaspoon of salt
1/4 teaspoon of cayenne pepper
1 lb of uncooked, peeled shrimp

Combine everything and marinate the shrimp for 30 minutes or more, then bake at 350 for 20 minutes until shrimp are done. If you use cooked shrimp, just marinate and heat on 350 until warm (10 minutes).

For a quick thaw, you can soak them in water for a couple of hours.

I prefer a simple pasta dish. Season and then saute shrimp in garlic and some butter/olive oil, add chopped tomatoes and some broth/wine and toss with spaghetti and parsley.

Since they're already cooked, I'd probably just thaw them, season and eat. If you want to make a meal out of it, you could warm them up in broth and add some noodles, or you can make my favorite quick supper, lemon butter shrimp with pasta.

I am trying to clean out our freezer and make room because we are buying an 1/8th of a cow from DH's uncle! woo hoo

So I have a bag of frozen, cooked shrimp in our freezer. What should I make? I am lactose intolerant though, so no alfredo, or anything else super cheesy and yummy...lol
