It's actually a twice cooked pork that I don't really have a recipe for. It's braised pork slices in a soy, sugar, garlic concoction, then quickly fried on high heat. He's usually in the mood for something healthy especially after going out to eat for work a lot so the other day when I made chicken and veggie stiry fry he was in 7th heaven. And I made slow cooker beef pot roast last week and he was raving about it, but if I made it too often he probably wouldn't like it. But here's what I did tonight.<br /> 1.Preheat oven to 450. Make mashed potatoes (boil them, add milk, salt, and pepper and mash.<br /> 2.Heat a little bit of oil on medium-high. Add carrots, onion, and thyme (or whatever veggies you want. I'd love to add mushrooms but hubby can't eat them, and celery would be good too). Cook until veggies are tender. Add 1/4 cup flour and 1/4 cup tomato paste; cook for about 1 minute while stirring. Add meat- I usually use ground turkey because it's healthier but of course beef tastes better; cook until meat is browned. Add 1 cup water; bring to a boil, and simmer 1 minute. Add peas. Set the filling aside.<br /> 4.Pour filling into a baking dish and put mashed potatoes on top. Sprinkle with some shredded white cheddar cheese.
