@regberadaisy: this is what I do... taste as you go along to tweak how you like it! My MIL's secret ingredient is the fish oil - I don't see that in a lot of recipes online but she uses a TB of it in every korean soup dish she makes, but you don't have to if you don't have it on hand. If you don't have pork belly or don't like pork, you can use a can of tuna instead - I actually really like it with tuna!

Ingredients:
- 3 cups really fermented kimchi, cut 2 inches long
- 1 TB sesame oil
- 1 TB minced garlic
- 1 TB fish oil (optional)
- 1 small onion, sliced
- cut up pork belly (or a can of tuna)
- 1/2 package firm tofu
- water
- 3-4 TB kimchi juice

Directions:
Heat a pot with sesame oil and add garlic. Then add the pork belly and kimchi and stirfry until kimchi turns translucent (about 6-7 min). Add enough water to cover everything. Add in reserved kimchi juice, and fish oil. Add tofu and onions. Simmer on medium low for at least 30 min. The longer the better!

@mrsjazz: I've been doing 1 meal (out of 4 cooked) without meat and it's taken a few months to get DH to stop whining. I've actually been surprised at how good a lot of the things have been though!

@mrsmate: Ohhh I remember that. Ugh. I had to leave the house so DH could cook himself giant meals to survive the whole week.

I've never tried it before and it turns out DH didn't start it soon enough to cook in the crock pot, so I guess he's going to try to BBQ the peppers. It's WAY too hot to turn on the oven. We'll see how that goes.

Gonna go bake a sweet potato in case I feel like eating it later (cue world's tiniest violin).

We pick up our first week of our farmshare on Wednesday, so I decided to play the rest of the week by ear depending on what we get from the farm.

I decided to get back on the meal planning bandwagon since we are trying to eat meat/fish only 1-3x a week. This week's menu is just 1x eating meat. We'll see what DH thinks of that!

Tonight: fried rice made from leftover Jamaican rice & peas (adding red onion, peppers, mushrooms, ginger, and egg) w/ sauteed sweet potato & spinach on the side.
Tues: Black bean & corn tacos w/guac and leftover sweet potato/spinach.
Weds: This mac & cheese http://www.thekitchn.com/recipe-bighearted-mac-cheese-w-137483 with peas and broccoli on the side.
Thurs: Rice w/ sausage and peppers
Fri: Spaghetti w/sauteed spinach & garlic
Sat: Sandwiches (not sure what kind yet)
Sun: Pizza w/ sauteed mushrooms & caramelized onions
