<description>&#60;p&#62;@regberadaisy:  because his kids (who live across the country in another state with their mom) are here with us for July and he's on vacation and he sees eating out as quality time. We got in a fight yesterday when I said I was tired and wanted to stay home instead of going out to eat (again) because he interpreted that as me &#34;not being excited enough&#34; to spend time with his kids. :(&#60;br /&#62;
He spent $100 in 2 days on food so far. Not including what will be spent for dinner tonight.

<description>&#60;p&#62;I just went through our finances and found an additional $1000 a month of disposable income we are blowing on mostly eating out and some entertainment. $100 dinners must stop if we want to get even more aggressive with our down payment savings. You guys have given me some great new and creative meals to try!  So, I kind of did some meal planning this week, although I only plan the night before!&#60;/p&#62;
&#60;p&#62;Monday: Grilled cheeses. Just got back from a 12hr drive from Atl.&#60;/p&#62;
&#60;p&#62;Tuesday: spaghetti and meat sauce&#60;/p&#62;
&#60;p&#62;Wednesday: my mom just told me how to do chicken au coq vin in the crockpot  over the phone. It took 15min and all I have to do is take it out the fridge tomorrow and turn the crockpot on low,&#60;/p&#62;
&#60;p&#62;Thursday: who knows? Maybe salmon I have in the freezer, and I'll drizzle some honey and mustard on it. Served with green beans and baked potatoes because we need to use them up! &#60;/p&#62;

&#60;p&#62;For hippie dinner, I use my rice cooker, but you could make it on the stove too.  I start cooking 1.5 cup quinoa in 3 cups water (or veg/chicken broth).  Bring to boil, cover and cook on low if doing on stove. I add a heaping tablespoon of coconut oil.  After it has been cooking about 10 minutes I layer on top (in this order): 1 chopped onion, 3-5 peeled and sliced carrots, 2 cans drained and rinsed chickpeas, and 1 bunch kale, chopped.  The I recover it and cook another 10 ish minutes (until quinoa is cooked).  I just wait until the rice cooker finishes.  &#60;/p&#62;
&#60;p&#62;When it's done I mix it all together, adding 2-3 T. tamari or ume plum vinegar.  We like to top each bowl with sriracha and a fried egg.  Sometimes some toasted sunflower seeds too.

<description>&#60;p&#62;@cmomma17:  Honestly, I end up making recipes because I challenge myself to make meals with the stuff we have in the fridge before I have to go to the store. &#60;/p&#62;
&#60;p&#62;LO has not been eating her veggies lately so I figured pesto, but I don't give her nuts yet, so I saw online that people with nut allergies use hummus or beans! No recipe, I just dumped olive oil, regular hummus, part-skim mozzarella (only cheese I had in the fridge), and spinach into a blender.&#60;/p&#62;

<description>&#60;p&#62;I just want to say that I am so impressed by people who are able to plan out the whole week and cook! I like cooking but it is so hard for me to sit down and plan meals AND cook every week. My mom did it religiously and I didn't appreciate it till now.&#60;/p&#62;
&#60;p&#62;It doesn't help that DH could care less if I cook, we order in, we go out or he eats deli meat on bread! If he cared/appreciated I'd probably do it more.&#60;/p&#62;

Monday: baked honey mustard chicken, brown rice, steamed asparagus&#60;br /&#62;
Tues &#38;amp; Wed: Homemade pasta sauce with meatballs &#38;amp; sausage over whole wheat spaghetti&#60;br /&#62;
Thursday: Frozen pepperoni pizzas with side salad&#60;br /&#62;

&#60;p&#62;The only way I can make it from Sunday-Thursday without going back to the grocer is to serve a frozen meal on Thursday. Next week it might be frozen lasagna if I can convince DH to eat it, lol!

Thursday - some kind of pasta w veggies from our garden and an olive oil sauce&#60;br /&#62;
Friday - Sunday - no clue yet :)

&#60;p&#62;Friday and Saturday: TBD - probably &#34;raid the fridge&#34; meals.
