&#60;p&#62;Oh, a few more vegetarian meals we eat…..&#60;/p&#62;
&#60;p&#62;We eat “burrito bowls” (no shell or chips) all the time. My husband likes steak with his, but mine is most often vegetarian:&#60;br /&#62;
Lettuce&#60;br /&#62;
Roasted corn&#60;br /&#62;
Black beans&#60;br /&#62;
Onion&#60;br /&#62;
Avocado&#60;br /&#62;
Tomato&#60;br /&#62;
Cilantro&#60;br /&#62;
Dressing: squeeze of lime and just a little bit of olive oil, S&#38;amp;P.&#60;/p&#62;
&#60;p&#62;Tuscan Farro salad&#60;br /&#62;
Roasted eggplant, fennel, onions, sweet peppers, carrots, other veggies of your choice.&#60;br /&#62;
Cooked farro&#60;br /&#62;
Balsamic vinegar, olive oil&#60;br /&#62;
Mince: basil, mint, parsley (or really, any combination of fresh herbs)&#60;/p&#62;
&#60;p&#62;Roast the veggies and chop roughly into bite size pieces. Toss with the cooked farro and herbs, dress with balsamic and olive oil. You’ll want to use a decent amount of balsamic.

&#60;p&#62;Wednesday: Baked salmon with dill sauce, celeriac mashed potatoes, more roast garlic spread on bread&#60;/p&#62;
&#60;p&#62;Thursday: Going out for our anniversary dinner.&#60;/p&#62;
&#60;p&#62;Friday: My parents will be here to visit so we have a big dinner planned: Roast chicken, roasted root vegetables, kale salad, grilled radicchio, more roast garlic spread on bread

&#60;p&#62;I like Budget Byte’s recipes, but find that I almost always need to double the seasoning she recommends, especially for anything spicy - FYI.
